Arista Al Forno - Tuscan Roasted Loin Of Pork

- 800g to 1 kg boned loin of pork shopping list
- Half a clove of garlic shopping list
- A whole lot of fresh rosemary, sage and bay leaves shopping list
- salt shopping list
- pepper shopping list
- extra virgin olive oil. shopping list
How to make it
- Finely chop garlic, rosemary, sage,bay leaves, two good pinches of salt and black pepper together. Put some of this mix (called 'battuto' in Italian) inside the meat. Rub the loin of pork with the remaining herb mix and some olive oil. Roast in the oven at 200 C for about 1 and a half hour. Serve sliced with its own juice and rocket or fresh salad.
