Cincinnati Bengal Chili

- 2 T butter shopping list
- 2 med. onions, finely chopped shopping list
- 6 cloves garlic, finely chopped shopping list
- 2 lbs. ground sirloin shopping list
- 1/4 c chili powder shopping list
- 1 t unsweetened cocoa powder shopping list
- 1 t ground cinnamon shopping list
- 1 t ground allspice shopping list
- 1 t ground cumin shopping list
- 2 c water shopping list
- 4 bay leaves shopping list
- 2 T cider vinegar shopping list
- 2 T honey shopping list
- 1 can red kidney beans, drained shopping list
- 1 lb elbow macaroni shopping list
- 2 T EVOO shopping list
- 1 T butter shopping list
- 2 c grated sharp cheddar cheese shopping list
- 1 c diced red onion shopping list
How to make it
- Place large pot over medium heat
- Melt botter
- Add 2 med. onions (finely chopped) and cook until soft, about 5 min, stir often
- Add garlic, cook 2 min
- Increase heat to high and add meat
- Cook until all pink disappears, stirring frequently and breaking meat up with spatula or back of spoon
- Add chili powder, cocoa, cinnamon, allspice and cumin, cook 2 minutes stirring frequently
- Add water. bay leaves, vinegar, and honey
- Bring to a boil, reduce heat to low and simmer, covered, 45 minutes, stirring occasionally to keep bottom from scorching.
- Add beans and cook 15 minutes more
- While chili is cooking, fill med. stovetop pot with water and salt generously with kosher salt
- Bring to a boil
- Add macaroni, EVOO and butter
- Cook until al dente
- Drain and rinse
- Serve in bowls with pasta on bottom, chili, then cheddar cheese and diced red onion on top.
- *I like to add chopped tomato, black olives and sour cream

I had never.... had cincinnati chili till I found this site... It just did not sound good.. THEN I TRIED it... I love it... and this has cumin.. so I have to have it!
