Ingredients

How to make it

  • Preheat oven to 350F
  • In a large bowl, cream the tofu, peanut butter, brown sugar & vanilla
  • Add the flour, baking powder and oats to the mixture
  • Stir thoroughly till well combined
  • Stir in chocolate chips if you desire a richer tasting cookie (alternatively, you can bake the cookies plain, then ice the baked cookies with some melted chocolate chips)
  • Drop spoonfuls onto a greased cookie sheet, at least an inch apart
  • Bake for 20-25 minutes (till golden brown)
  • Yields approximately 30 cookies

    are these crispy? or soft...i like my cookies crispy..not how applesauce makes them soft muffin-like..please let me know asap b.c i would love to make soon once you tell me if they are crispy..thanks a bunch.

    This is a great recipe, even as a non-vegan I love the way you replaced butter and eggs with tofu! it is a great base for experimenting as well.
