Chicken Scallops

- 2 cups macaroni shopping list
- 3 tbsp oil shopping list
- 1 med onion, chopped shopping list
- 3 pieces unsmoked Canadian bacon, chopped shopping list
- 2 cups button mushrooms, chopped shopping list
- 1/4 cup cooked chicken, chopped shopping list
- 1/4 cup cream shopping list
- 4 tbsp breadcrumbs, dry shopping list
- 1/2 cup grated cheddar cheese shopping list
- salt and pepper shopping list
How to make it
- cook the pasta in boiling water with 1 tbsp oil. When pasta is almost tender, drain, return to pot and cover.
- Heat the broiler to medium.
- Heat the remaining oil in a skillet...fry the oinion until translucent. Add chopped bacon and mushrooms and cook for an additional 3-4 minutes, stirring once or twice.
- Stir in pasta, chicken and cream. Season
- Brush 4 large scallop shells with oil. Spoon in the chicken mixture and smooth to make neat mounds.
- Mix together breadcrumbs and cheese and sprinkle over the top. Press the topping lihtly into the chicken mixture. Broil 4-5 minutes until golden.
