Easter Rice pie

- 1 cup ricotta cheese shopping list
- 1/2 cup cooked cooled rice shopping list
- 4 whole eggs shopping list
- 1 cup granulated sugar shopping list
- 1 tablespoonful cinnamon shopping list
- 2 teaspoonsful vanilla shopping list
- 2 teaspoonsful lemon extract shopping list
- 2 unbaked 9 inch pie crusts shopping list
- Mix ricotta and rice. Add 3 beaten eggs one at a time until smooth. Add sugar and all the flavorings and cinnamon. Pour into unbaked pie shell top with second crust . Beat remaining egg with 1 tablespoon water until frothy. Brush top crust all over. Prick top for air vents. shopping list
- Bake in 350 oven for 40 t0 45 minutes or until lightly brown. shopping list
