Ingredients

How to make it

  • Scrub zucchini,cook in small amt of water till crisp tender or a little softer. Cool
  • Saute onion in 4T butter until golden.
  • Cut squash into cubes and add to onion.
  • Stir in cheese,accent,salt and pepper Cool
  • Mix vegetables lightly with beaten eggs. Spoon into buttered 1qt. baking dish
  • Melt remaining 2T. of butter,add to breadcrumbs and toss.
  • Sprinkle crumbs over top of zucchini mixture.
  • Bake 350 for 40 m until knife in center comes out clean..

    Love new zuccini receipes,I have a garden.I love it breaded and fryed especilly with Panco then drained well,a little salt so good!I will try yours.THANKYOU!!!!!!

    Great recipe! My grandmother (Grand ma Fudd) gave almost the exact same recipe to my Mother 60+ years ago! God only knows how long she had been making it or where she got it. It is a true Fudd family tradition now. We aren't related are we? Just happened to run into your posting.

    I made this last night and we loved it! I can see this recipe working with a variety of veggies. Nice and cheesey without being so over the top ooey gooey, and the breadcrumbs were golden and just a little crispy. Great blend of flavors. Will be making this one often.
