Bourbon Honey Orange Cheesecake

- Crust: shopping list
- 2 cups slivered almonds shopping list
- ¼ cup sugar shopping list
- ¼ cup butter (unsalted) shopping list
- Filling: shopping list
- 2 pounds cream cheese (softened) shopping list
- ¾ cup honey shopping list
- ½ cup bourbon shopping list
- 1 tablespoon orange zest shopping list
- 3 tablespoons cornstarch shopping list
- 3 large eggs (room temperature) shopping list
- Topping: shopping list
- ¾ cup sugar shopping list
- 2 ounces water shopping list
- ½ cup silvered almonds shopping list
How to make it
- For Crust:
- Grind almonds and sugar in a food processor.
- Melt butter in small pot then combine with almond sugar mixture
- Press crust mixture into a 16” spring form pan
- For Filling
- Whip cream cheese until light and fluffy add honey, orange zest and cornstarch, adding one egg at a time, mix until incorporated,
- For topping:
- mix sugar and water in a small pot and cook over medium heat until carmalized (Stirring continuously)
- Add almonds and pour onto a sheet pan and let sit until cool.
- Break and grind topping.
- Pour cheesecake filling into spring form pan.
- Bake in a water bath at 300° F for one hour.
- Sprinkle with ground almond & sugar topping mixture.
- Let cool before serving.
