Gluten And Lactiose Free Macaroni And Cheese

- 2-3 slices of bacon shopping list
- 1 medium white onion chopped shopping list
- 2 garlic cloves finely diced shopping list
- 3 cups cheddar goat cheese, grated shopping list
- 2 tablespoons Earth Balance spread( or becel vegan margarine) shopping list
- 3 tablespoons gluten free flour shopping list
- 2 cups So Delicious soy free coconut milk for coffee(or lactose free milk) shopping list
- 8 ounces gluten free elbow macaroni( Catelli has good ones) shopping list
- salt and pepper. shopping list
- Paprika shopping list
- 1 teaspoon grated Nutmeg. shopping list
How to make it
- Pre heat oven to 350 degrees
- Cook bacon on medium heat until nicely browned
- When done drain on paper towel
- crumble, and set aside
- In a medium frying pan saute onion and garlic about 5 minutes
- Take off the heat and add the bacon and set aside
- In a large pot bring water to a boil and add a good pinch of salt
- Add pasta and cook till al dente then drain
- For the Sauce
- Melt the earth balance spread over medium heat,
- Once melted add the flour and stir for 2-3 minutes
- Add the milk slowly and keep stirring until the milk gets thick
- Once it thickens add 2 cups of the cheese and stir until melted
- add the nutmeg to the sauce and stir well.
- salt and pepper to taste.
- Combine the pasta with the milk mixture, onion, garlic,and bacon and mix until blended
- Pour into a 2 quart casserole dish and sprinkle the rest of the cheese over all
- Bake uncovered until the cheese is melted and a nice golden brown 15-20 minutes.
- Serve warm with a green salad and some nice crusty bread.
- NOTE: I sprinkle a bit of paprika on top for color.
