How to make it

  • Pre heat oven to 350 degrees
  • Cook bacon on medium heat until nicely browned
  • When done drain on paper towel
  • crumble, and set aside
  • In a medium frying pan saute onion and garlic about 5 minutes
  • Take off the heat and add the bacon and set aside
  • In a large pot bring water to a boil and add a good pinch of salt
  • Add pasta and cook till al dente then drain
  • For the Sauce
  • Melt the earth balance spread over medium heat,
  • Once melted add the flour and stir for 2-3 minutes
  • Add the milk slowly and keep stirring until the milk gets thick
  • Once it thickens add 2 cups of the cheese and stir until melted
  • add the nutmeg to the sauce and stir well.
  • salt and pepper to taste.
  • Combine the pasta with the milk mixture, onion, garlic,and bacon and mix until blended
  • Pour into a 2 quart casserole dish and sprinkle the rest of the cheese over all
  • Bake uncovered until the cheese is melted and a nice golden brown 15-20 minutes.
  • Serve warm with a green salad and some nice crusty bread.
  • NOTE: I sprinkle a bit of paprika on top for color.
