Simple Zucchini Planks

- zucchinis (3 or 4) shopping list
- grape or cherry tomatoes (any topping of choice works with this, really! It's a very diverse recipe.) shopping list
- olive oil shopping list
- salt and pepper shopping list
- garlic powder or fresh minced garlic shopping list
- basil (dried or fresh/chopped) shopping list
- Shredded mozzarella cheese shopping list
- Grated parmasan cheese shopping list
How to make it
- Preheat oven to 375.
- Slice zucchinis in half, length-wise.
- Sliver a bit of the green off the bottom to keep them from tipping over.
- Brush the tops with olive oil and garlic/garlic powder.
- Slice tomatoes and lay them in rows across tops.
- Top with the cheeses, basil, salt and pepper.
- Bake for 20-30 minutes or until fork tender.

Very good! I added some pizza sauce just cause I had it, but think it would be good without too :) Layered the ingredients a little different also, added a full review in the IMI II Group------------------> more
