Apple Fritters With Blackberries And Mascarpone Cream

- 1 vanilla pod/or you could use vanilla extract shopping list
- 500g (1 lb 2 oz) mascarpone cheese shopping list
- 3 egg yolks shopping list
- 30g (1 oz) icing sugar shopping list
- 1 kg (2 1/4 ib) blackberries, washed shopping list
- 2apples, cored and sliced into rings-skin on shopping list
- 55g (2 oz) plain flour shopping list
- oil for frying shopping list
- caster sugar for dusting shopping list
- FOR THE BATTER shopping list
- 55-85g (2-3 oz ) self raising flour shopping list
- Enough cider to make a batter shopping list
How to make it
- Preheat oven to 200c (gas 6
- Scrape the seeds from the vanilla pod and mix together in a large bowl with the mascarpone, egg yolks and icing sugar.
- Place the blackberries in a oven dish and tip over the mascarpone mixture.
- Bake for 15-20 minutes
- Meanwhile to make the batter, place the self raising flour in a bowl and whisk in enough cider to create a batter, to the consistency of double cream.
- Coat the apple pieces in the plain flour and then dip in to the batter.
- Shake off excess batter and deep fry in the hot oil for 2-3 minutes, or until golden brown.
- Carefully remove using a slotted spoon and drain on kitchen paper.
- Serve a couple of the apple rings together with a generous spoonful of the hot blackberry and mascarpone cream and dust with caster sugar.
