Sweet Potato Succotash

sweet, slightly spicey, a real crowd pleaser.even better with pepperjack cheese. a good way to eat your veggies :}

chop all the veggies and add to the pan with oil on med heat
cover and stir often
when tender turn off heat and add pepper jack cheese on top...its optional if your vegan, or dieting. but its a real pleaser with a lil cheese!
