Bananas Foster Bread

- 1-1/2 c mashed ripe bananas shopping list
- 1 c packed brown sugar shopping list
- 6 TB butter,melted and divided shopping list
- 1/4 c cognac or dark rum,divided shopping list
- 1/3 c plain fat-free yogurt shopping list
- 2 large eggs shopping list
- 1-1/2 c flour shopping list
- 1/4 c ground flaxseed shopping list
- 3/4 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp ground cinnamon shopping list
- 1/8 tsp ground allspice shopping list
- cooking spray shopping list
- 1/3 c powdered sugar shopping list
How to make it
- Preheat oven to 350'
- Combine banana,1/2 c brown sugar,5 TB butter and 3 TB cognac in nonstick skillet. Cover over med heat until mixture begind to bubble. Remove from heat;cool.
- Place banana mixture in large bowl.add yogurt,remaining 1/2 c brown sugar and eggs. Beat with mixer at med. speed.
- Weigh or lightly spoon flour into dry measuring cups;level with knife.
- Combine flour and next 5 ingredients in small bowl. Add flour mixture to banan mixture;beat just till blended. Pour batter into 9x5" loaf pan coated with cooking spray.
- Bake for 1 hour or till pick near center comes out clean. Cool 10 mins on wire rack. Remove bread from pan,place on rack.
- Combine remaining 1 TB melted buttwer,remaining 1TB cognac and powdered sugar;stir till well blended. Drizzle over warm bread.

I can't fairly critique this recipe, never having the real bananas foster. I condescend to her tastebuds.
