Ingredients
- 1/2 lb capellini pasta -cooked according to the instructions on the package shopping list
- 1 1/2 c sweet cherry tomatoes -halved shopping list
- 3-4 garlic cloves – grated shopping list
- 3 tbs extra virgin olive oil shopping list
- 1 tbs butter shopping list
- 10 basil leaves -thinly sliced shopping list
- 1/4 c of the pasta water + more if needed shopping list
- freshly grated parmigiano reggiano shopping list
- the juice from 1/2 lemon -freshly squeezed shopping list
- the zest from 1 lemon shopping list
- 1/2 tsp sea salt or to your taste shopping list
- freshly cracked black pepper to taste shopping list
How to make it
- Heat up the butter and olive oil in a saute pan over medium low heat. Add the garlic and cook for about 45 seconds until it releases its flavors (don’t let it get any color)
- Add the tomatoes and allow them to simmer on low flame until they start to release their juices (3-5 min). Add the pasta water, stir gently and remove from heat.
- Add the lemon juice and lemon zest, season with the salt and pepper then toss with the capellini. Sprinkle with the fresh basil and a drizzle of ev olive oil.
- Serve with freshly grated parmigiano reggiano on top.
