Just a few recipes

As we get closer and closer to the arrival of this new baby I have been searching for new recipes... recipes that are a bit... well less time consuming than some of the ones that we have made in the past. Thanks to pinterest I have found and tried a few that are worth throwing into our regular rotation, some have been well, not my style, but a few have been great. Recipe #1 The first was such a hit that Michael requested it for breakfast, lunch and dinner, and was actually upset (there were tears) when I told him that we didnt have anymore. I am making it again tomorrow so he should be thrilled. I will preface by saying that the idea of white chicken chili did not appeal to me at first, something about it seems, well against chili, but it was yummy. Last year I tried a white chicken chili from america's test kitchen and it was delicious... but it also took about 4 hours to make, required 3 different types of chilies (that could not all be purchased at the same store), and a cou

English Muffins... yeah they are great.

love the plug in the background... but really they are tasty, ignore my photography skills.  So the other day as I was perusing pinterest I came across a recipe for English muffins. I am not a big bread person, but I have a soft spot for English muffins, especially with butter and apricot jam. Since I am still on my quest to gain weight and add bread to my diet I thought I would give it a whirl. The recipe is so easy, seriously you have lovely English muffins in 45 minutes, which seemed great to me because it didn’t involve buckling Mikey into the car, making sure he had milk (because what would a car ride be without milk, oh wait a screaming car ride), finding the English muffins, waiting in line, rebuckling, and driving home. Plus there are so few ingredients my guess is that they cost about the same as the store ones, and most people have these items on hand (maybe not the cornmeal, but splurge, spend the $2 it makes the recipe and you can use it... for awh

Roasted Veggie Pasta

With Brian working late I have decided to become more inventive with my cooking. Okay inventive isnt the word, but lazy might be. We eat a lot of wraps and quesadillas these days, Mikey likes them and they are fast.  Anyway my friend told me about something she makes and I had to try it (it sounded fast). Roasted Veggie Pasta (serves 4) 2 red bell peppers cut into 1 inch pieces 2 zucchinis cut into 1/2 inch thick rounds 1 onion salt and pepper olive oil 1/2 box pasta 2 grilled chicken breasts feta cheese (as much as you like) parmesan cheese (as much as you like) preheat oven to 450. cut up veggies, toss with olive oil (add extra, you will need it), and salt and pepper. Bake at 450 for 30 minutes or until spotty black (unless you dont like that in which case pull them out earlier). Cook pasta according to package directions salt and pepper chicken breasts, grill, slice, and set aside. Pour everything into a large bowl. Add olive oil until everything is coated, add
