Zucchini baked in the oven

It's that time of year-- when these yellow (and green) little guys are all over in the garden.  We like zucchini, but I am always looking for new ways to cook it. Here's the latest recipe- and it's a good one

Wash & Slice your zucchini

then spread them on a cookie sheet and drizzle with olive or grapeseed oil.   Sprinkle with a little bit of garlic, salt & ground pepper and top with fresh grated parmesan cheese or fresh basil-- or both!   Bake @350 for 20 minutes and then ENJOY!!
I think you're going to love this- it cooks up so tender and yummy.

How to store fresh Vegetables & Herbs

I told you I would let you in on a great way to keep your Asparagus fresh longer.  I do this with fresh cut vegetables & herbs.  Take a wide mouth mason jar or a glass and fill it with a little bit of cold water-- then place your asparagus,cilantro, dill, spearmint, basil, celery ect. into the water and put it in your refridgerator.  They will keep fresh so much longer... during the summer I do this with all the fresh herbs from the garden, then they are ready to use-- I find that I use them more in the things I cook when they are already cut & easy to grab!
