Scones

Good Monday morning.  I would say "I can't believe it's been a while since my last post" but that wouldn't be an accurate statement.  The most accurate statement is "Whew! time has flown by since my last post"! I never intend to stay away so long but things happen and one day slips into another.  I guess I'm just trying to stay up with life.

I've been looking through some Pinterest pins to find a recipe for scones. The more I drooled over the photos the more I just had to pull out the ingredients and get down to business.

After measuring and blending and mixing and patting and slicing...these are what jumped out of the oven.

Yummy blueberry scones with a light confectionery frosting. 

I took this photo with the camera on my phone so it's not the best quality but there's plenty of quality in these scone.

These delectable treats were made on the spur of a moment, I didn't have the heavy cream on hand that the recipe calls for so I substituted yogurt for the cream. In spite of the substitution the scones turned out delish!

If Life Gives You Snow....


Make a snowman.  We were forecasted to have snow today but it looks like it bypassed us and stayed South and West of us.  I'm trying to decide if I'm happy about it or not.  Hey, if it's going to snow, I'd rather it be on the weekend.

And what better to go with snow than a cup of Joe and some Cinnamon Snickerdoodle Cookies.


Snicker Doodles
 1 1/2 cups of sugar
1/2 cup butter, softened
1/2 cup shortening
2 eggs
2 3/4 cups of flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
2 tsp cinnamon

sugar mix for dipping dough in: 3/4 cup of sugar, 1/2 tsp of cinnamon; mix and set aside

Heat oven to 400.
Mix sugar, butter, shortening and eggs in a large bowl.
Mix flour, cream of tartar, baking soda, salt and cinnamon in a separate bowl then add to creamed ingredients.
Shape dough into a rounded ball then press into sugar mix.
Place 2 inches apart on a baking sheet and bake for 8-10 mins.

A cup of joe and a cookie....




for breakfast!  I love to have cookies, cake or pie for breakfast. I know it's not a healthy choice but one can't always choose healthy over yummy.  Oh, I love pizza for breakfast too!

My Sweetie called me a few days ago and asked if I would help him make some cookies for a Thanksgiving luncheon that his company was having last Thursday.  Well, of course I would help him.  So, that evening when I arrived home he had rifled through the recipe box and selected two potential cookie recipes. He had started to gather the ingredients together for both recipes. Well, I have to admit when I saw it all, one eyebrow shot up and my engaging welcoming smile sort of turned lop-sided.  Really....2 cookie mixes? Isn't that double the work and double the trouble?  He quickly settled on the snickerdoole recipe and we started to work.  He creamed the soft ingredients and I took care of the dry ingredients.  We mixed the two together formed the cookie ball and popped them in the oven. I have to admit this is a perfectly simple cookie recipe with great taste!

Snickerdoodle Cookies

1 1/2 cups of sugar
1/2 cup of butter (softened)
1/2 cup of shortening
2 eggs
2 3/4 cups of flour
2 tsp of cream of tarter
1 tsp baking soda
1/4 tsp of baking soda
2 tsp of cinnamon

Sugar mix: 1 cup of sugar and 1 tsp of cinnamon. 

Heat oven to 350.  Mix sugar, butter, shortening and eggs. In a another bowl ( I use a gallon sized baggie to mix the dry ingredients) mix the dry ingredients).  Add dry ingredients to creamed ingredients and mix by hand. Form into a cookie ball and press into sugar mix.  Place 2 inches apart on cookie sheet.  Bake for 12-15 minutes.
