Saturday Challenge


Saturday April 12th is "LOOK UP AT THE SKY DAY" . So I challenge you to go out and tell us what you see.

Letters- Day 11

Dear everyone,

Have you had the chance to watch 'The Last Lecture'? I just watched it twice, the one that was on Primetime the other night was first. I cried through the whole thing. Not just little tears, but big ugly cries. It really touched home. Then I watched the whole lecture on youtube here . There are 10 parts.

What would you say if you knew you were going to die and had a chance to sum up everything that was most important to you?

Carnegie Mellon Professor Randy Pausch, who is dying from pancreatic cancer, gave his last lecture at the university Sept. 18, 2007, before a packed McConomy Auditorium. In his moving talk, "Really Achieving Your Childhood Dreams," Pausch talked about his lessons learned and gave advice to students on how to achieve their own career and personal goals. I cannot imagine changing my way of thinking at this late date, but I intend to try. I encourage everyone who hasn't seen this to watch it in some version when you get a chance. It will make you cry, laugh, and wonder why you cannot think that way. Over 10 million people have downloaded it to date.

Amazing Slow Cooker Orange Chicken

1/4 cup all-purpose flour
10 3/4 ounces cream of chicken soup, condensed
1/2 teaspoon seasoned salt
1/4 teaspoon pepper
1/4 teaspoon salt
4 boneless skinless chicken breast halves
1/2 cup chicken broth
2 teaspoons brown sugar
1/3 cup frozen orange juice concentrate

1 Heat the shortening in a skillet over medium-high heat. In a bowl, mix the flour, condensed soup, seasoned salt, pepper, and salt. Dip chicken in the mixture to coat, and fry in the skillet until golden brown.
2 Place chicken in a slow cooker. Mix the chicken broth, brown sugar, and orange juice concentrate in a bowl, and pour over chicken in the slow cooker.
3 Cover, and cook 2 to 3 hours on Low or 1 to 2 hours on High.

Wow, that's hard to answer. I think any smells that remind me of my childhood.

#4. Share a recipe that uses beef.

Pepper Steak

Notes: In place of the tomatoes, I sometimes use one 15 oz. can tomato sauce. It makes a lovely gravy for the rice.

1 1/2 pounds round or sirloin steak, cut in 1/8 " strips
2 tablespoons garlic salt
2 tablespoons margarine
1 cup sliced onions, with tops
2 green bell pepper, cut in strips
2 large tomatoes, diced
1 cup beef broth
1/4 cup water
2 tablespoons cornstarch
2 tablespoons soy sauce
3 cups hot cooked rice

Sprinkle steak with salt and pepper (and meat tenderizer); brown meat in butter. Add garlic salt. Add onions and green peppers; cook until wilted. Add tomatoes and broth. Cover and simmer on low heat about 15 minutes. Blend water with cornstarch and soy sauce. Stir into steak. Cook until thickened. Serve over hot rice.

Dear Mr Buck,
I am so sorry that when I scratched you two weeks ago in the eye it took your site away. I know Dad took you to the vet and he said he thought it would get better, and gave you icky eye ointment, and I thought all was ok.
Now you are totally blind in that eye and for that I am truly sorry. But as you know, I am the king cat of this house, and I like my space. So stay away from me, because sometimes if you get all up in my space, I will claw your eyes out. Since you only have one good eye now, this is a warning, but a friendly one. Back away from me!

Scrumptious Sunday






Theme= SOUP



1 tablespoon vegetable oil
1 cup diced onion
1 cup diced celery
1/2 cup diced sweet bell pepper, red or green
4 to 6 ounces diced ham
4 cloves garlic, minced
4 cups chicken broth
3 cups cooked black-eyed peas or 2 cans (15 to 16 ounces each) drained and rinsed
1 1/2 cups frozen chopped turnip greens or spinach, thawed
2 cans (14.5 ounces each) tomatoes, diced, with juice
1/2 teaspoon Creole seasoning
1/4 teaspoon ground black pepper
1/4 teaspoon dried oregano
salt, to taste

PREPARATION:
Stovetop:
In a large Dutch oven or large saucepan over medium heat, saute the onion and celery in vegetable oil until tender. Add the ham, bell pepper, and garlic and saute, stirring, for 2 to 3 minutes longer.
To the ham and vegetable mixture add chicken broth, black-eyed peas, greens, tomatoes, Creole seasoning, pepper, and oregano. Reduce heat to low, cover, and simmer for 45 minutes to 1 hour. Taste and add salt, as needed.
Slow Cooker:
In a skillet over medium heat, saute the onion and celery in vegetable oil until tender. Add the ham, bell pepper, and garlic and saute, stirring, for 2 to 3 minutes longer. Transfer ham and vegetables to the slow cooker; add chicken broth, black-eyed peas, greens, tomatoes, Creole seasoning, pepper, and oregano. Cover and cook on LOW for 5 to 7 hours, or HIGH for 2 1/2 to 3 1/2 hours. Taste and add salt, as needed.
