Johnsonville Italian Meatballs

Ingredients
1 package Johnsonville® Mild Italian Sausage Links or Ground Sausage
1 egg, lightly beaten
1/3 cup dry bread crumbs
1/4 cup grated Parmesan cheese
1/4 cup milk
1/4 cup finely chopped onion
Directions
Preheat oven to 350 degrees F.
In a large bowl, combine the egg, bread crumbs, Parmesan cheese, milk and onion. Remove sausage from casings. Add sausage to the bread crumb mixture and mix well. Shape into 20 meatballs. Arrange meatballs on a shallow baking pan
Bake for 20 minutes or until meatballs are cooked through (160 degrees F). Serve with your favorite sauce and spaghetti.

Ingredients
3 pounds lean ground beef
5 tablespoons ground oregano
5 tablespoons dried parsley, crushed
1 clove garlic, chopped
1 (1 ounce) package dry onion soup mix
2 cups Italian-style dry bread crumbs
3 (28 ounce) jars spaghetti sauce
Directions
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10x15 inch jelly-roll pan.
In a large mixing bowl, combine ground beef, oregano, parsley and garlic. Mix in onion soup mix and seasoned bread crumbs. Mix thoroughly.
Using a 1 ounce scoop, scoop and shape the meat mixture into balls. Place in the prepared pan and bake in a preheated oven for 1 hour or until meatballs are browned and cooked through.
In a large pot over high heat, bring the spaghetti sauce to a boil and add cooked meatballs. Reduce heat and simmer for 4 hours.

Ingredients

  • 5 tomatoes, seeded and diced
  • 4 cloves garlic, minced
  • handful chopped fresh basil
  • 100ml (4 fl oz) olive oil
  • salt to taste
  • 2 tablespoons grated Parmesan cheese
  • 1 (500g) pack pasta, any shape you prefer

Preparation method

  1. Combine tomatoes, garlic, basil and olive oil in a non-metallic bowl. Stir in salt. Cover with cling film. Allow to sit at room temperature at least 2 hours, or as long as 10 hours.
  2. Cook pasta in a large pot of boiling salted water until al dente. Drain. Pour uncooked sauce over hot pasta, and toss. Add grated Parmesan cheese to your liking.

Adele's True Love Italian Chicken

Ingredients

  • 10 bulbs garlic, cloves separated and peeled
  • 8 skinless, boneless chicken fillets, sliced in half
  • 1 tablespoon olive oil
  • 1 tablespoon white wine
  • Freshly ground black pepper
  • 1 onion, chopped
  • 1 teaspoon olive oil
  • 2 tablespoons butter
  • 2 (400g) tins chopped tomatoes
  • 1 tablespoon chopped fresh rosemary
  • 225g spinach or plain tagliatelle

Preparation method

  1. Preheat oven to 80 C / Gas mark 1/4.
  2. Peel garlic and crush to release juices. In a large frying pan, sear the chicken in 1 tablespoon olive oil and white wine. Place the garlic in a lightly greased 23x33cm (9x13 in) baking dish and place seared chicken on top.
  3. Sprinkle a dash of ground black pepper over the top. Cover and bake in the preheated oven for 30 to 45 minutes or until the chicken is cooked through.
  4. In a medium frying pan, cook the onion in 1 teaspoon of olive oil and butter, until soft and golden.
  5. Add tomatoes and rosemary, or any combination of your favourite fresh herbs to taste. Stir together and remove from heat.
  6. Cook tagliatelle according to package instructions and drain.
  7. Place tagliatelle in a long, shallow serving dish. Pour the onion and tomato mixture over it, then place baked garlic chicken pieces on top with some or all of the garlic.
  8. Garnish with a sprinkling of fresh parsley.

Gram's Chicken Pot Pie Updated

1 lb. boneless skinless chicken breasts, cut into bite-size pieces
2 Tbsp. KRAFT Zesty Italian Dressing
2 cups frozen mixed vegetables
1 can (10-3/4 oz.) condensed cream of chicken soup
1/4 lb. (4 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
1 sheet frozen puff pastry (1/2 of 17.3-oz. pkg.), thawed
1 egg, beaten

HEAT oven to 400ºF. Cook and stir chicken in dressing in large skillet on medium heat 5 min. or until done. Stir in vegetables and soup. Spoon into greased 9-inch square baking dish; top with VELVEETA.

UNFOLD pastry sheet; place over chicken mixture. Fold under edges of pastry; press onto top of baking dish to seal. Brush pastry with egg. Cut several slits in pastry to permit steam to escape.

PLACE dish on baking sheet. Bake 30 min. or until crust is deep golden brown. Let stand 5 min. before serving.

Remove pastry sheet from freezer; cover with plastic wrap. Thaw at room temperature for 30 min. or in refrigerator for 4 hours. Thawed wrapped pastry sheets can be stored up to 2 days in refrigerator.

Mascarpone Parfaits

Ingredients

  • 1 tablespoon butter or stick margarine
  • 4 cups diced peeled Granny Smith apple (about 1 1/2 pounds)
  • 1/2 cup packed brown sugar
  • 2 tablespoons fresh lime juice
  • 2 tablespoons water
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon salt
  • 2 cups 2% low-fat cottage cheese
  • 1/4 cup (2 ounces) mascarpone cheese
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract

Preparation

Melt the butter in a large nonstick skillet over medium-high heat. Add apple and the next 5 ingredients (apple through salt), and cook 12 minutes or until liquid is almost absorbed. Remove from heat.

Place cottage cheese in a food processor, and process until smooth (about 2 minutes). Add mascarpone, granulated sugar, and vanilla, and process until smooth. Spoon 2 tablespoons cheese mixture into each of 6 parfait glasses, and top each with 2 tablespoons apple mixture. Repeat procedure with 3 tablespoons cheese mixture and 2 tablespoons apple mixture, ending with 3 tablespoons cheese mixture. Cover and chill at least 4 hours.
