Baked Italian Lamb Meatballs
This was too good not to add to the blog so I can find it later! We had the chance to buy some local lamb not too long ago, and have ocasionally been pulling a package out from the freezer to enjoy.
I had some leftover Hawaiian rolls and thought meatball sliders would be delicious and decided to use some of the ground lamb for those.
We baked these beauties up, sliced the rolls in half, added spaghetti sauce, and some provolone cheese - baked and voila! So here is a meatball recipe and an idea on how to use them if you have some rolls that need using too!
Ingredients
1 lb ground lamb
1 large egg
1/4 cup plain breadcrumbs
2 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
1 tsp dried parsley
1 tsp salt
1/2 tsp black pepper
Directions
- Preheat oven to 350 degrees. Line a baking sheet with a silpat / parchment paper (you'll see above that I did not, and though they're not terribly hard to get off the baking tray they did stick a little!)
- Combine all ingredients in a large bowl and mix. Use a 1/2 TBS scoop to form (and then hand roll to smooth) about 12-13 large meatballs and arrange on the prepared baking sheet.
- Bake 22-24 minutes, until well browned and slightly crispy on the bottom.
- Cool and refrigerate for later use, or use as desired!
