Iced Coffee Float
If you are searching for a prefect summer breakfast drink or a drink for a lazy sunday summer brunch, just check this beautiful iced coffee float. Yes this drink asks for just three ingredients, yea coffee powder, water and vanilla icecream. With these simple ingredients you can make this ultimate drink with less efforts. This iced coffee float is one of my favourite drink, its been a while i had it at starbuck's coffee and finally i simply whisked out at home to enjoy this ultimate drink. You doesnt need any gadgets to make this refreshing coffee drink. Though i used store bought vanilla icecream, if you have homemade icecream dont forget to make this fabulous coffee float.

Caramel Kulfi
Kulfi, this Indian frozen dessert is well known for its particular shape, they goes for a specific moulds which is quite easily available in India. If you live in abroad and you have completely forgotten to get your kulfi moulds, i have an easy breezy substitution for those popular moulds. Just get a popsicles mould from your nearby supermarket and make your favourite frozen dessert with those simple moulds. Eventhough i have kulfi moulds at home, i like to make kulfis in popsicle mould as they are quite easy for the kids to carry and enjoy thoroughly without much efforts.My today's recipe goes for a different kulfi, actually i want to name it as Fusion kulfi, as this kulfi goes for caramel sauce. I used homemade caramel sauce, which can be made easily with sugar and butter. But still if you dont know or dont want to make your homemade sauce just stick with the store bought ones.

Eggless No Bake Frozen Mango Custard Cheesecake
June is a month of celebration for us, that too towards the last week its almost everyday a birthday. My younger brother,my daughter, my cousin and my SIL celebrates their birthday. Obviously i wont keep myself away from baking. First comes my brother's birthday, usually i'll bake vanilla cake for him, but this time for a change i went for an eggless No bake cheesecake with mango, this King of fruits started showing their head in Indian stores and this time i pickled some Pakistani Mangoes( dont ask me about the name coz i dont have any idea about the name, but the fruit was really very fleshy and prefect for making this cheesecake). Since i was bit busy with other stuffs i couldnt bake him a cake earlier, obviously i went for this quick cheesecake and kept in freezer instead of fridge.

Eggless Clementine Gelato with Salted caramel Flakes
Gelato is Italian icecream, this frozen dessert ressembles very much like icecream as most of the ingredients for making gelato goes almost for icecream. Gelato is prepared with milk,cream,sugar,fruits or nut puree as main ingredients as they are prepared by heating process. Eggs are used in this Italian icecream for giving a smooth texture to Gelato. But i tried making mine as eggless. Icecream maker is not need for making this homemade gelato, yes you can prepare gelato by using your blender. Since my theme for this week's blogging marathon is Summer specials,i couldnt resist to post this fruity gelato with salted caramel flakes i bought recently from our weekend trip.

Pina Colada Mocktail
Pina colada is a sweet and rum based cocktail made usually with rum, cream of coconut,pineapple juice served either blended or shaken with ice. Since i chosed mocktails as this week's theme for blogging marathon am posting today a non alcholic delightful pina colada. Do you know, pina colada has been the official beverage of Puerto Rica since 1978.Coconut and pineapple blended together makes this incredible mocktail and trust me we enjoyed thoroughly. With loads of icecubes, eventhough the weather was super down and nasty we couldnt stop ourselves having this beautiful drink.
I went for storebought coconut milk and fresh pineapple chunks which i blended together as fine paste with a scoop of vanilla icecream, the addition of icecream turned this mocktail seriously very delicious. A super creamy mocktail to enjoy thoroughly while the weather is too hot,an incredible thirsty quencher definitely.Whoever love this exotic combination of drink will definitely go crazy if they taste this delicious mocktail.Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#40.

Chilled Pomegranate Oats Shake
Its peak season for pomegranates and they are dead cheap in our nearby farmer's market, obviously my H got a kilo of super sweet pomegranates. After having them in salad and as juices, there were still some pomegranates sitting sadly in my fruit basket, none at home want to have them either in salad or as juice, instead of making them again as a juice, i tried my hands in making this healthy, very refreshing shake with pomegranate seeds,rolled oats and vanilla icecream. Seriously this combo works wonder and whoever told 'no' to the pomegranate juice, will definitely enjoy thoroughly this healthy shake.
If you dont have pomegranate,just add any seasonal fruits like apples,pears,pineapples in this shake, am sure you will definitely love this healthy shake thoroughly. Also you can have this shake anytime of the day, even for breakfast during summer. This shake is a big hit among my kids, obviously this shake is a kid's friendly drink.

Hot Chocolate Fudge~SFC#~1
Hot chocolate fudge, its been ages i had this fantastic dessert. But finally i could make some at home and thanks to Preeti of Simply Tadka for suggesting this incredible and easy breezy dessert for this month's Sweet Fantasy Club. Few scoops of vanilla icecream and a simple hot chocolate sauce is enough to make this incredible dessert. My kids enjoyed thoroughly this incredible dessert and asked me again to make this chilled dessert.A quick hot chocolate sauce topped over few scoops of vanilla icecream makes this fantastic hot chocolate fudge.
Eventhough the weather is too cold, we seriously enjoyed thoroughly this dessert, my H have completely fallen in love with this dessert. Definitely this dessert is a real feast for both icecream and chocolate lovers. I went for vanilla icecream and homemade hot chocolate sauce which i simply prepared by melting chocolate chips in double boiler. If you want to change the flavor of the icecream just go with your favourite flavor.

Falooda ~~SN Challenge
Yesterday i was eagerly waiting to see our this month's South vs North Challenge an event owned by Divya Pramil, unfortunately we the South Indian Team came to know about our challenge very late in nite. Eventhough before leaving to bed, i checked the recipe and its our family favourite Falooda, this drink is in my to do list since ages, but somehow i couldnt able to make them earlier. This time how can i skip this drink, whenever we go to Indian restaurant, my daughter will definitely order this chilled and sweet beverage and we love to have a sip from her's. Everytime she yells on us for finishing wat she ordered but who cares and everytime we do the same. Obviously when i prepared her favourite drink at home, she had this drink after her lunch and enjoyed finally a tall glass of this falooda completely by herself.
Do you know Falooda or Faluda is a cold and sweet beverage containing many ingredients which is very popular in South Asia. Traditionally it is made by mixing rose syrup with vermicelli, basil (sabza/takmaria) seeds, jelly pieces and tapioca pearls along with either milk or icecream.Falooda vermicelli are often made from arrowroot rather than wheat. The rose syrup may be substituted with another flavoured base like mango,chocolate, saffron or else with any other fruit syrup but my choice is always rose syrup.Nowadays faluda is a popular summer drink throughout Pakistan, India, Bangladesh, Sri Lanka, Myanmar, and the Middle East and is readily available in restaurants and beach stalls.Thanks to this month's North team Minnie of The Lady8home for challenging the South team (which i belongs) with this incredible beverage while Vijayalakshmi of our South team challenged the opposite North team with Ellu Poorna Kuzhakattai, a must for the upcoming Ganesh chathurthi in every South Indian's home.Minnie suggested us two versions of falooda one with icecream and second one with malai kulfi, somehow i went for the icecream one.

Rendez Vous With A Foodie - PT of Indian Kitchen
My readers and followers will definitely know that every 7th and 20th of the month i'll be inviting newbie bloggers from this bloggy world to write a guest post in my space. Today is an another special day for me,yep today's host is a wonderful ,sweet person, before going to know about her, if anyone want to be my guest and if your blog is less than two years please do contact me through Facebook or by a mail with your facebook name to add you in this new adventure. Hope many of you will join ur hands with me. Obviously the motto of this event is to introduce the upcoming new bloggers to this immense virtual world.
Coming to today's guest, She is none other than Preeti Tamilarasan of Indian Kitchen. For me,Preeti means a brilliant photographer, excellent cook, innovative chef and a pure non vegetarian lover.If you go through her space, her breath taking pictures will definitely speaks a lot. Give her an ingredient, am sure she will give you back an incredible dish.Her creativity doesnt have any boundary and she makes me hungry everytime whenever i go to her space.
Preeti is a humble,down to earth person,modest, and a young lady who always speaks from the bottom of her heart, if you have chitchat with her am sure you cant stop yourself pinging her atleast once a day.Recently she even joined her hands with few more blogger friends for making a virtual birthday for me, how lucky i am na.I have to say a big thanks to this virtual world for giving me a bunch of honest friends to whom i can share my laughs and sorrows, obviously Preeti is one among them. Trust me, am eagerly waiting to make a trip to India just to meet few of them.I came across Preeti's blog before a year and from that day onwards i got hooked to her space and i never failed to visit her space.Whenever i talk to Preeti, i feel like speaking to my younger sister who listens her elder sister,thanks Preeti for being this much kind towards me and seriously am loving our sister-friendship bond between us.

I have know priya akka for past 1 year but never tried to talk to her. For past 5-6 months we have come close to each other and I really admire her cooking and baking skills. She is juvenile, down to earth and really hard working person. I have always told her to write a cooking book but every time she neglects it.. I hope she will write at least for us.

Kesar Pista Kulfi~~SN Challenge
Anything from freezer makes everyone happy when the weather is super hot outside, as i told earlier we are running behind chilled fresh juices, icecreams coz of the super hot weather and am trying to avoid to buy from stores, nothing can beat the homemades na. Today is the 1st day of the month and obviously i'll posting my first recipe of the month for the famous South vs North Challenge an event owned by Divya Pramil. After making an elaborated Rajasthani Thali challenged by Manjula, i was quite excited also anxious to know about this month's challenge for the Southern team, coz anything can happen in this SN Challenge. Thank god, this month's challenge was the famous Kesar pista kulfi, a very apt chilled dessert for us to enjoy while the North team have to prepare the most famous dal kheer aka pasiparuppu payasam challenged by Divya Pramil.
Once i went through the Kesar Pista Kulfi recipe challenged by Shruti of Shruthi Rasoi, i started immediately making this incredible nutty kulfi for our afternoon's dessert. Thanks Shruti,am just relishing the kulfi dear and loving it, its was so creamy,highly nutty with a superb saffron flavour. The motto of this event is to exchange an Indian recipe between two teams. Strawberry Lime Granita
Granita looks like sparkling jewels and it contains hardly any calories.Granita goes for fresh fruits, lemon juice and sugar, with these three ingredients you will get a beautiful frozen dessert.This frozen dessert requires no ice cream maker and just need to freeze the mixture in a stainless steel box and scrape the frozen mixture with a fork.Using stainless steel box will accelerate the freezing time and helps for a quick freezing.Usually i'll make strawberry granita, but for a change i tried adding some lime zest and lime juice in this granita,which gives seriously a different flavour to the usual strawberry granita.

Eggless Mixed Berries Icecream
Paris climate is dramatically super hot since few days and i cant tolerate this sudden hot weather here, obviously am making almost everyday some healthy and refreshing homemade drinks,nutritious salads and few homemade eggless icecream to keep us cool. One of the recent addition to my tried and tasted eggless icecream is this mixed berries icecream. With a combination of strawberries,raspberries,blackberries and blueberries, i prepared myself a thick mixed berries sauce at home which i finally turned it as this delicious, super catchy icecream.
Am running my fourth week of blogging marathon with Kid's delight - Summer Special for three days, so i'll be sharing three different dishes which are tasted and approved as prefect summer special dishes by my kids during this week's blogging marathon. Coming to this eggless mixed berries, you doesnt need icecream maker and with simple utensils you can make a prefect,smooth eggless icecream eventhough this no icecream maker version goes for a super quick preparation. Eggless Apple Cinnamon Icecream
How about an eggless apple,cinnamon icecream without cream for our dessert after a heavy meal. This apple icecream doesnt need cream and its completely egg free. The full fat milk reduced to three fourth of their quantity and the milk powder with the cornflour mixture makes the magic. Tastewise, the addition of cinnamon powder brings a zing while having this fabulous icecream.We know that apple and cinnamon combination works wonder together in anything and obviously this combination in an ice cream tastes equally great.
Since this icecream dont have any fats,you can have two more scoops of this fruity icecream, and a prefect dessert to serve while its super hot outside. A very light icecream to relish and you can use very well this apple cinnamon icecream for making shakes. They tastes fabulous in shakes too.Sending to Viji's SYS-WS - Apple & Carrot.
1/2litre Full fat milk
2nos Red apples (peeled and grated)
1tbsp Milk powder
1tsp Corn flour
1/4cup Sugar
1/4tsp Cinnamon powder
Cook the grate apples in a cup of water until they turns soft, drain the cooked water (if any ) and keep aside.
Meanwhile bring boil the full fat milk, sugar together and cook in simmer until they reduced three fourth of the quantity.
Combine the milk powder and cornflour with enough milk and keep aside.
Add this milk powder-cornflour mixture to the boiling milk, stir continously until the milk thickens.
Let the milk gets cool completely, add the cooked apples, cinnamon powder,mix well.
Pour this mixture into a stainless steel vessel and place it in a freezer for 4 hours.
Once the mixture starts setting, remove it from the freezer and blend in a mixer till its turns smooth.
Pour this mixture again to the same vessel and place it in freezer again till it sets well.
Scoop this icecream while serving.

Gulkand Cooler
Gulkand cooler, i quickly whipped up this summer cooler with homemade eggless gulkand icecream,rose syrup,almonds and chilled milk. An excellent summer drink,definitely a fabulous cooler to beat the heat. Sometimes i usually make foods quickly but to name it i'll break my head everytime. This time, i didnt break my head and obviously one of my blogger buddy helped me to decide a name for this wonderful drink.Thanks sweet heart else i would have struggled a lot.

Dried Figs & Vanilla Shake
Even the weather in Paris is between sunny,rainy and windy, we love to have a glass full of healthy shakes. We love dried fruits, needless to say we never stop ourselves munching them, i'll try atleast to feed my kids daily with dry fruits. Eggless Rose Petal Icecream/ Gulkand Icecream
Even the weather is chilled, i dont bother to relish few scoops of icecreams, i have told already about my experience with gulkand. After this shake,my next trial with gulkand is this eggless icecream, Pavithra of Dishes From My Kitchen suggested her gulkand icecream. I bookmarked it immediately and tried last weekend, thanks to Pavi for suggesting this smooth,attractive and droolworthy icecream. I couldnt stop myself enjoying this icecream, they were just addictive. Since its eggless, you dont need to feel guilty to relish it,also you doesnt need an icecream maker to prepare this icecream. Am sure,you guys will definitely enjoy this smooth,soft and delicious icecream.
2cups Fresh cream (chilled)
1cup Milk (chilled)
4tbsp Gulkand/ rose petal preserve
1tbsp Rose syrup
3/4cup Sugar
In a bowl whisk together the milk and sugar until the sugar gets dissolves.
In a large bowl, take enough icecubes, now place the milk mixture bowl inside,pour the fresh cream and beat it with a beater until it gets thickens.
Now add th rose petal preserve,rose syrup to the thicken mixture and beat again for a while.
Transfer this smooth mixture to an air tightened box and keep in freezer for maximum three hours.
Relish this fantastic,smooth icecream.

Instant Eggless Strawberry Icecream
You dont have ice cream maker, you dont have enough time to prepare icecream before a day, you want to serve a quick and easy breezy icecream, if so this icecream is definitely for you. Actually, this recipe goes for frozen strawberries, sweetened condensed milk and chilled milk, thats it. Your icecream is ready just with three ingredients, you just blend everything in a blender and your instant icecream is ready to relish.
You can make variety of this quick icecream with a variety of frozen berries or simply with frozen fruit chunks, you can mix and match as you desire and your quick eggless icecream are ready to serve. Take the frozen strawberries,sweetened condensed milk and chilled milk together in a blender, blend them slowly together as a smooth paste.
Serve immediately this instant icecream with sugar pearls and cornflakes.
Notes:
Indian mixies works out wonder for making this instant icecream, sometimes it will be hard to blend, just add chilled water or milk to grind.
Once blended,you can transfer this icecream to a stainless steel box and arrange them in freezer for later use.
You can serve this ice cream topped with candies, nuts or else simply with chocolate sauce.

Masala Chai Kulfi
I have already told its summer here,but when its comes to temperature its not at all summer here. Before a week, its was super hot and suddenly its raining like anything. Peoples whoever went for summer vacations to the Northern part of France came back home without any satisfaction as they spend their vacation with very bad climate. Obviously this summer wasnt that much hot here, anyhow i couldnt stop myself making icecreams and chilled desserts for us.
For the second day of the blogging marathon, i wanted to make something chilled. First i planned to make some sorbet with green tea or iced tea,but somehow i want to go for my all time favourite kulfi. This kulfi goes for quick preparation with spiced tea water, sweetened condensed milk, chopped pistachio nuts and heavy cream.Oh boy, you guys have to give a try to this masala chai kulfi, seriously this kulfi tastes absolutely divine. 1tsp Lipton tea powder
1/2cup Milk
1/2cup Sweetened condensed milk
2tbsp Pistachios (chopped)
1/2cup Heavy Cream
1no Cardamom (crushed)
1inch Cinnamon stick
2nos Cloves
Bring boil the milk with tea powder,crushed cardamom,cinnamon stick and cloves, strain it in a large bowl and keep aside. Cover it with a lid and gets completely cool.
Add the condensed milk and chopped pistachios to the tea flavoured milk and keep aside, meanwhile beat the heavy cream until it forms soft peaks.
Gently add the already prepared mixture to the cream and whisk slowly until everything gets well mixed.
Divide this mixture in kulfi moulds or plastic cups as per need and let them sit in freezer for overnite.
While serving,run the hot water over mould, pull it with a knife to the plate. Serve with some chopped nuts.

Eggless Dulce De Leche Icecream
Have you ever tasted Haagen-dazs dulce de leche icecream, oh boy its our family favourite icecream. I can finish a 500ml pot within few minutes, just love it that much.Two days after preparing some homemade Dulce de Leche, i prepared this eggless dulce de leche icecream at home without an ice cream maker. So guys just prepare some short cut dulce de leche at home easily and do prepare this delicious fake haagen-dazs style of dulce de leche. I have no words to say how tasty this icecream was, i couldnt stop having myself and we finished this icecream within three days. 2cups Wholemilk
1cup Heavy cream
1+1/2cups Dulce de leche
Heat the whole milk and bring boil, add the dulce de leche and cook for few minutes. Now keep aside and let them gets cool completely..
Whish the heavy cream, dulce de leche-milk mixture together well for few minutes, now transfer this mixture to a stainless box or in a box and arrange in freezer for an hour.
After an hour,take out the slightly freezed icecream and beat them for few seconds in a blender and pour it again to the box. Freeze it for overnite.
