Badusha


Badusha is a famous  South Indian sweet made with all purpose flour and sugar.In North India this sweet is known as Balushahi.It is having a flaky texture coated with sugar syrup.Usually this is made during diwali.I got this tempting and easy recipe from "lovefromkitchen" by Nawal.



Ingredients


All purpose flour – 2 cups

Baking powder – ½ tsp

Baking soda – a pinch

Powdered sugar – 1 tbs

Salt – a pinch

Butter/Ghee – 75g(at room temp)

Yogurt – 1 tbs

Cardamom powder – ¼ tsp

Water – to knead

Oil for frying


For syrup


Sugar – 250g

Water – 1 cup


Method


1.Take a bowl and sieve flour,baking powder,baking soda,powdered sugar and salt.


2. Then add butter/ghee,yogurt,cardamom powder and crumble altogether with hand,then add water and knead into a dough till soft and stops sticking,Cover the dough and keep it aside for 30 minutes.


3. Prepare the sugar syrup by boiling  water and sugar till it reaches one string consistency.


4.Take the dough and make small size balls and flatten them. Make a small depression at the center of the flattened dough and deep fry them until golden brown colour.


5. Remove from the oil and  soak them in the sugar syrup till the next batch is ready.


6. Now remove the badusha from the sugar syrup and serve this sweet, hot or chilled.



Garnish with almonds,cashews or with saffron strands…

Carrot Beetroot halwa


 
The festivals and other traditional celebrations are incomplete without the taste of  Indian sweets.The essential sweet dishes that are dished out during diwali and holi include halwa,rice kheer,ladoo,gulab jamuns...the list goes on.. As you all know that  carrot halwa(gajar ka halwa) is a wonderful dessert...so i just thought of making a combination halwa with carrot and beetroot for this holi..Halwa turn out very delicious...give it a try.

Carrot Beetroot halwa




Ingredients:

carrot-1 cup
beetroot-1cup

milk-3cups
condensedmilk-1 tin
sugar-1cup
ghee-4tsp

Preperation:


Use non-stick pan

1.Boil carrot and beetroot with 3 cups of milk and stir well.
2.When it gets cooked add 1cup sugar and condensed milk .Stir well until it becomes thick.
3.Remove the flame and add 4-5 tsp ghee.If u want u can also add roasted cashew nuts and pistachios.
4.Put on greased tray & allow to cool.




Serve it hot or chilled.

Apple Sandesh


Sandesh is one of the most popular dessert in bengal.It is paneer fudge.Many dessert can be made with paneer.Among one of them is apple sandesh.A soft smooth sweet dessert which can be made for all festival celebration.

Ingredients

For the apple mixture

Grated apples – 2
Lemon juice – 1tsp
A few saffron strands - soak in 2tbs of hot water
Condensed milk – 3tbs(it is not in the original recipe)
Sugar – 5tbs

For the sandesh

Paneer(fresh cottage cheese) – 200gm(room temperature)
Milk – 2tbs
Powdered sugar – 7tbs
Rose essence/kewra essence – a few drops

Direction

1.Take a non stick pan,put  the grated apples,lemon juice,condensed milk,sugar,soaked saffron strands and cook on medium heat till the mixture becomes soft and dry.When it is done, switch off the flame and allow it to cool.

2.For the sandesh.take paneer in a bowl and mash thoroughly,then add the balance ingredients and mix well.

3.From this sandesh mixture,you can easily make 3 balls.Take each ball in the hand and flatten it. In the centre of the flattened ball add a spoonful of apple mixture and cover it carefully.

4.Top with apple mixture and pistachio.







Chill it for half an hour and serve it.Really a delicious sweet.
Have the left over apple mixture with ice-cream...yummy!!!
