Try a New Recipe Tuesday- January 26

Greetings from very snowed-in Pennsylvania!  Hope you all are safe and warm.  We survived Snowmaggedon 2016 with about 2 1/2 feet of snow (even higher where it drifted!)

It is time for some delicious recipe sharing!


In the first two spots below are my Sweet-and-Sour Muffin Meat Loaves and my daughter's Chocolate Marshmallow cupcakes.  Hope you enjoy them!  :-)

Kiddo #4's Chocolate Marshmallow Cupcakes

Kiddo made us these Chocolate Marshmallow Cupcakes this afternoon during the snowstorm. (it is still raging on, btw)  Delicious!  :-)



Ingredients:
1 cup boiling water
1/2 cup unsweetened cocoa powder
1 1/3 cups all-purpose flour
1/4 tsp salt
2 tsp baking powder
1/2 cup butter, softened
1 cup sugar
2 tsp vanilla extract
2 eggs
Marshmallow fluff (optional.  Omit if you want to make a regular chocolate cupcake)

Directions: In a small bowl, mix boiling water and cocoa powder and set aside to cool to room temperature. In a medium bowl, mix together flour, salt and baking powder. Set aside. In a large bowl, mix together butter and sugar until light and fluffy. Add vanilla extract. Add eggs, one at a time beating well after each addition. Add the flour mixture, mix until well blended. Add cocoa and water mixture also beating until well blended. Pour batter into muffin liners half way. Put 1-2 tsp of marshmallow fluff on top if using then cover in batter until muffin liner is filled. Bake for 15 minutes at 370 degrees F. Let cool on a cooling rack before frosting.

Vanilla frosting:

Ingredients:
3 cups powdered sugar
5 1/3 tbsp butter, softened
2 tsp vanilla extract
3 tbsp milk


Directions: Mix Ingredients together in a medium bowl until frosting forms and there are no more lumps.

Sweet-and-Sour Muffin Meat Loaves

I was trying to come up with an idea for something quick and easy and thanks to myrecipes.com, I was able to find this sweet-and-sour muffin meat loaves recipe that was really, really good! (and definitely quick and easy, as well!)

Ingredients
1 cup ketchup
1/4 cup packed brown sugar
2 tablespoons vinegar
2 pounds ground beef, chuck or sirloin (I used 1 pound of ground beef)
1 egg
1 onion, finely chopped (I used 2 heaping tablespoons of minced onion)
1/2 cup bread crumbs (I used a little bit more.  You can judge your texture and adjust accordingly)
salt and pepper to taste

Preheat oven to 400 degrees F and grease a 12-cup muffin tin.  Mix 1/2 cup ketchup, brown sugar and vinegar in a small bowl.

In a large bowl, combine ground beef, egg, onion, bread crumbs and remaining 1/2 cup ketchup; season with salt and pepper.  Combine ingredients well.

Place 2 1/2 tsp. ketchup mixture in bottoms of prepared muffin wells.  Form meat mixture into 12 equal balls and place in muffin tin, pressing down to smooth top of meat.





Cook meat loaves until no longer pink and juices bubble around edges; about 20 minutes.  Remove from oven and let sit in pan for 5 minutes before carefully removing.  Serve with mashed potatoes and mixed vegetables, if desired.

One Word for 2016

My word for 2016 is Joy.



That being said, it is not a 'I'm going to be happy all the time' joy.  That is unrealistic.  I found the following on a blog and thought it summed it up perfectly:

"Joy is the settled assurance that God is in control of all the details of my life, the quiet confidence that ultimately everything is going to be alright, and the determined choice to praise God in every situation.

You'll find nothing in that definition about happy feelings, because as we all know, happiness is fleeting and temporary.

We tend to think that life comes in hills and valleys.  In reality, it's much more like train tracks.  Every day of your life, wonderful, good things happen that bring pleasure and contentment and beauty to you.  At the exact same time, painful things happen to you or those you love that disappoint you, hurt you and fill you with sorrow.  These two tracks-- both joy and sorrow-- run parallel to each other every single moment of your life.

That's why, when you're in the midst of an amazing experience, you have a nagging realization that it's not perfect.  And while you're experiencing something painful, there's the glorious realization that there is still beauty and loveliness to be found.  They're inseparable.

If you look down the train tracks into the brightness of the horizon, the tracks become one.  You can't distinguish them as two separate tracks.  That's how it will be for us, too.  One day, our parallel tracks of joy and sorrow with merge into one.  The day we meet Jesus Christ in person and see the brightness of who He is, it will all come together for us.  Then it will all make complete sense."


I could not have said it better myself.  So, "Joy" it is for 2016!
