Try a New Recipe Tuesday-- June 5

This week I am going to share a recipe that we have enjoyed.  It's not that difficult to make at all and is quite tasty.  :-)

Potato Crust and Hamburger Quiche
3 potatoes sliced very thin
4 tablespoons olive oil
3/4 pound ground beef
1 medium onion
5 eggs
1 1/2 cups milk
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 cups shredded cheddar cheese
1/2 cup shredded parmesan

Slice potatoes very thin, rinse
Layer in 9-inch pie pan, overlapping them slightly.  Sprinkle parmesan cheese over the potatoes.  Fry beef and onions; drain.  Transfer to pie pan.  Spread cheddar cheese over the beef.  In large bowl, whisk eggs, milk, pepper and salt.  Pour over other layers.  Bake at 375 for 50 minutes.

that sounds really good. i took hamburger meat out for dinner tonight and was going to make tacos...i think i have everything for this though...hmmm....
