Epicure's Everyday Meatloaf with a twist

Ingredients

  • 2 large eggs, beaten
  • 1/4 cup (60 ml) skim milk
  • 1/2 cup (125 ml) dry breadcrumbs
  • 3 Tbsp (45 ml) Epicure's Seasoning for Meatloaf
  • 2 lbs (1 kg) lean ground beef, chicken or turkey
  • Epicure's Sea Salt, to taste 
  • Large bell peppers (any colour), sliced into 8 thick rings (about 1 ") (the peppers are the twist!)
 Instructions

  1. Preheat oven to 375° F (190° C).
  2. Whisk eggs and milk in a large bowl. Stir in breadcrumbs and Seasoning for Meatloaf.
  3. Add meat and Sea Salt, and mix well.
  4. Line a cookie sheet with parchment paper or tinfoil (spray if using foil!) and place pepper rings on sheet.
  5. Divide meat mixture between pepper rings and pat down.
  6. Bake approximately 40 minutes (make sure no pink in the middle!)
  7. Brush with Epicure's Chipotle Ketchup and, if desired, add cheese and broil until melted.
Delicious!!!!!!!

Spicy Stuffed Peppers and My Wii!

Pin It I am off work until next year!  Yay!  Ok, so that just means I am off today, tomorrow and the weekend, and go back to work Monday, but it feels good to be off for the rest of the year. 

To kill time today while waiting for my new Wii to arrive, I decided to make stuffed peppers.  There are about a bazillion different recipes out there and really, it's not that complicated to make stuffed peppers.  You take ground meat of some sort, tomato sauce, veggies and either rice or barley, some peppers and cheese if you like and voila!  Stuffed peppers!

These turned out amazing!  Not bad for 5pts each (11pts for 2).  I had 2 for supper with some roasted sweet potato on the side.  Yum!




So I picked up my new Wii tonight!  I was one of the few fortunate ones.  Apparently ALL of the Staples online orders received between Dec 24 and Dec 28 were delayed due to a computer crash.  I placed my order on December 25th and miraculously it arrived!!!  Very odd...  So I have the Wii, the Wii Fit Plus, the Wii Balance Board (and the Energizer charger for it)...but I can't get my balance board to sync Wii console :-(  I may have to get my brother to look at it I think...good thing there's a techie genius in the family!  I did pick up the Jeopardy game though!  I liked it a lot (yes, I'm a bit geeky).

Tomorrow is first post-Christmas weigh in.  I think I'm down a pound-ish...Hoping for at least 2 to recover from last week's two pound gain, but I will take what I can get this time of year!

Mexican Lasagna - photos/review

Pin It This is going on my top 5 list! Photos below...as I said, I didn't use the monterey jack cheese, but I forgot to mention that due to the spice level in the peppers and salsa, I also left out the chili powder and cayenne pepper...neither of which were missed. This recipe was TOTALLY not as spicy as I anticipated it would be. It was too spicy for Linda (she was here when I ate supper), but she's totally not into spicy food. I think for someone who likes a touch of heat to their meal, it is a great recipe.
