Toronto…the finale

So I told you I had fun when I was away right?  But unless you follow me on Twitter or on Facebook (Judy Chiappini) you may not know what exactly I was up to…

It was a friend of mine’s birthday and he invited me to a party at his house…

Can you believe how lucky I was to be invited to this Greek feast?  Peter single handedly prepared and served us all night long.  Paula did make the birthday cake and it is by far one of my all time faves…Lemon Meringue Cake!

We were able to meet up with Paula and Peter once again but just for a quick bite to eat after we went to the Science Center to see Harry Potter The Exhibition!  Still a little bit of time with 2 of my favorite bloggers and friends is better than no time at all…

Loved meeting Paula (xoxoxo) and Jasmine and seeing Peter again!!!  Thank you for making this a memorable trip for me and can’t wait to do it all again next year…lamb on a spit right????

What We Ate with links and recipes…

So I posted a teaser the other day of all f the food that we ate over the Memorial Day weekend but right after that my computer developed a virus and it took me until Friday of last week to get everything figured back out.  I was so lucky and ended up not losing anything but some of the files are different and I had to reinstall some things.  Anyway as promised…

Starting from the upper right hand corner and going clock wise and finishing up in the middle:

 DSC_0182 Tzatziki sauce – this is typically used with souvlaki and gyros but we used the leftovers all weekend sometimes even as a salad dressing!!!

DSC_0185 Greek Salad – Really simple dressing that is fresh and quick to make.

DSC_0264 Marinated Shrimp Salad – So simple and the best thing is you make it the night before and allow it to marinate all night.  Then just take it with you the day of the party.

Watermelon infused with watermelon Vodka:  Simply take a whole water melon and cut a hole in the skin just large enough for a funnel to fit in.  Do this about 12 hrs before serving.  Fill the funnel with watermelon vodka and allow the watermelon to absorb it.  Keep doing this until the desired amount is in the watermelon.  Chill and slice immediately before serving.  Place a cork in the whole for transporting to the party!

DSC_0189 Pork Souvlaki:  This is the souvlaki recipe that I got from my friend Peter over at Kalofagas.  It is the best I have ever tasted and made by me at home!

Spanakopita (Spinach Pie)


During Christmas when my Mom was here, we made a run to Costco to pick up some things. Mom loves Costco for the very same reason that my girl's do...SNACKS!!! I can go through that place after taking them to skating on Saturday mornings and can almost get away without serving them lunch that day!!

Well Mom walked past the lady who was sampling the Spanakopita. They weren't quite ready yet. Mom decided to camp out until they were ready. Lucky for us it wasn't too long and she had her little triangle package of bliss...or was it? I tasted mine and my first thought was I can make this better!!! So I started searching for recipes and of course I didn't have to look too far!

Peter, one of my bestest buddies, at Kalofagas-Greek Food and Beyond was able to hook me up. Only thing was he made his own Phyllo Dough???!!! Very impressive but not what I had in mind. So I emailed him and we went back and forth a couple of times before I headed off to the grocery store to BUY some frozen phyllo dough.

This made for an incredible meal and even as large as the slices were the girls ate a whole one each.

I used a 9" Square baking pan and it worked perfectly for us!

Spanakopita (adapted from Kalofagas-Greek Food and Beyond)

Ingredients:

1 roll of frozen phyllo (filo) dough, thawed and ready to use
1 1/2 cups of ricotta cheese
2 large eggs
8 oz. feta cheese
1 Tbsp chopped fresh dill
1 bunch of scallions, sauteed in oil (softened)
2 boxes of frozen spinach, thawed and chopped
1 tsp garlic powder
salt and pepper to taste

Directions:
  • Mix all ingredients (but the phyllo dough) together and check for taste.
  • I used a 9" square pan and it worked fine. Grease your pan (bottom and sides with oil (best not to use olive oil or butter for this as it could burn).
  • Now you take the phyllo sheet by sheet and layer it in your pan, alternating directions. Use 12 sheets for the bottom and that will leave you 8 sheets for the top. When the bottom is layered melt some butter and add some olive oil and drizzle some on your bottom layer and spread with a pastry brush. Poke some random holes with a fork in the pastry.
  • Spread your spinach mixture evenly over then pastry. You will have pastry overlapping the sides of the pan.
  • Start layering the top layer of phyllo dough. Alternating directions. When all 8 pieces are on fold the edges together and roll down. Using your butter/oil mix be sure to coat the top layer well.
  • Cut through the top pastry layer to help avoid breaking your dough once cooked.
  • Bake for about 45 minutes to an hour in a 375 degree oven. When nicely browned remove from oven and cover with a clean tea towel for about 15 minutes.
This was so incredibly fast and easy! I know I didn't make the little triangles but this is much more practical for a meal. I will be making this again and again! My pie was definitely fuller than Peter's and he had cautioned me about overfilling it as it may ooze out. I think my filling was a bit thicker than it should have been so I didn't have that trouble and I liked it nice and thick! We served it with a green salad and it was a nice hearty meal! I may try my hand at making my own dough. See here for Peter's step by step instructions!

Greek Stuffed Peppers

Greek Stuffed Peppers!

So I was stumped once again for dinner. Imagine that. A freezer full of crap and I still have no idea what to make for dinner! So what did I do? I "twittered" it.

Peter from Kalofagas was the first to respond and his recipe sounded really good. All except for the fact that his recipe called for mint and dill, 2 of T.'s most hated things and tomato's, the oldest daughters nemesis. What was I to do? Should I substitute and change Peter's family recipe (his Mom's???)? No way, screw the rest of the family. I made it his way and guess what? They all loved it!!!

Piperies Gemistes (Stuffed Peppers)-Peter of Kalofagas

2 lbs. lean ground beef
12 red peppers, washed, tops cut and inside cored

2 medium onions, diced

1/3 cup olive oil

3 cloves of garlic, minced

1/2 cup of fresh parsley, finely chopped

1/2 cup of fresh dill, finely chopped

2 tsp. fresh mint, finely chopped

1 cup of good tomato sauce (pomodoro)

1/4 cup arborio rice
salt and pepper to taste


  1. Wash then cut the tops off your peppers. Hollow out the peppers to rid them of any ribs or seeds. Reserve
  2. Place a large skillet on your stove and heat under medium high heat. Pour in your olive oil then add the onions and garlic and lower to medium heat and simmer for 10 minutes to soften the onions.
  3. Add your parsley, dill, mint and and tomato sauce and simmer until most of the liquid is gone and you have a thick mixture. Take off the heat and allow to cool for 5 minutes.
  4. Add your rice and ground beef to the onion/herb mixture and and mix all the ingredients using a wooden spoon. Add 2 tsp. of salt and pepper and mix. To taste for seasoning, take a spoonful of the mixture and fry it or cook it in the microwave to taste for seasoning. Afterwards, adjust the seasoning in the mixture to your liking.
  5. Using a spoon, stuff your peppers and line the bottom of a roasting pot. Pour 1 cup of water over the peppers and place them in a preheated 375F oven for 1 hour.
Hints: This is Peter's recipe but I wasn't sure if I was suppose to cook the rice or meat. I cooked the meat but not the rice. I wouldn't do either again next time. I would leave the rice raw and the meat.

I made these during the day and then T. heated them up for us for dinner as I was at Karate with oldest daughter. Delicious for a make ahead meal!
