KREMALI TART KEK


TART CAKE WITH PUDDING

This delicious cake recipe is one of Nigar's recipes. 
I visited her last weekend. She was very welcoming and kind as always.Thank you my dear friend.

Ingredients:

Cake:
  • 2 eggs
  • 1/2 cup of granulated sugar
  • 1/2 cup of regular milk
  • 1/2 cup of vegetable oil
  • 2 tbsp. of cocoa powder
  • 1 packet vanilla sugar
  • 1 tsp of baking powder
  • 1 cup of flour
Pudding:
  • 1 cup of regular milk
  • 2 tbsp of all purpose flour
  • 2 tbsp. of granulated sugar
  • 2 tbsp of butter
  • 8 oz. cool whip

 Preheat the oven to 350F.
Sift flour, cocoa powder, vanilla sugar, and baking powder together in a bowl.
Whisk eggs and sugar in another large mixing bowl until it gets creamy. Gradually add milk, vegetable oil whisking consistently.
Add sifted flour,
cocoa powder,vanilla sugar, and baking powder to the bowl and whisk  thoroughly.
Pour this mixture to a 11" non-stick tart pan and bake it for 25-35 minutes. Check the cake by inserting a toothpick into the center. The toothpick will come out clean when the cake is done.

In a large sauce pan, take flour, milk and for the pudding and whisk. Add 1 cup of milk and turn the heat on high. Stir constantly until it starts to bubble. Turn the heat off. Add butter and sugar and whisk it. Set aside until it is in room temperature. Add cool whip to the pudding and whisk it until it is smooth.

Spread the pudding on to the cooled cake and flatten the surface. Decorate it with some cocoa powder and pistachio.
Take it in the refrigerator at least for an hour before serving.

PORTAKALLI & HAŞHAŞLI KEK

ORANGE & POPPY SEEDS CAKE

Ingredients:
2 eggs
zest and juice of 3 oranges
1 cup of milk
1/2 cup of vegetable oil
3 cups all purpose flour
2 cups of granulated sugar
3 tbsp of poppy seeds
1 tsp of baking powder
1/2 tsp of vanilla sugar
Preheat the oven to 350F.
Sift flour, vanilla sugar, and baking powder together in a bowl.
Whisk eggs and sugar in another large mixing bowl until it gets creamy. Gradually add milk, vegetable oil, orange zest, and orange juice whisking consistently.
Add sifted flour, vanilla sugar, poppy seeds and baking powder to the bowl and mix thoroughly.
Pour into bundt cake pan and bake approximately 50 minutes. Check the cake by inserting a toothpick. The toothpick will come out clean when the cake is done.

KURU İNCİR & KURU ÜZÜM VE CEVİZLİ KEK





  






















DRIED FIGS & RAISINS &WALNUT CAKE

After a long vacation and some health issues, I am back...

Ingredients:
•2 eggs
•1 cup of chopped walnut
•15-20 dried figs
•1 large size apple ( grated )
•1/2 cup of plain yogurt
•1/2 cup of sunflower oil
•1 tbsp of ground cinnamon
•1+1/2 cups all purpose flour
•1/2 cup of whole wheat flour
•1 cup of brown sugar
•1 tsp of baking powder
•1/2 cup of raisins (chopped )



Soak figs in a medium bowl with warm water for 30 minutes. Drain and cut them into cubes.

Preheat the oven to 350F.

Sift flour, cinnamon, salt, and baking powder together in a bowl.

Whisk eggs, granulated sugar in another large mixing bowl until it gets creamy. Gradually add yogurt, sunflower oil whisking consistently.

Add sifted flour, cinnamon, salt, and baking soda to the bowl and whisk thoroughly. Add figs, walnut, raisins and apple to the bowl and stir.

Pour this mixture to a 8" non-stick round cake pan and bake approximately 60 minutes. Check the cake by inserting a toothpick into the center. The toothpick will come out clean when the cake is done.

DAMLA ÇİKOLATALI & FINDIKLI KEK







































CHOCOLATE CHIPS & HAZELNUT CAKE

Ingredients:
  • 2 eggs
  • 1 cup of chopped hazelnut
  • 1 cup of chocolate chips
  • 1/2 cup of plain yogurt
  • 1/2 cup of vegetable oil
  • zest of 1 orange 
  • 1+1/2  cups all purpose flour
  • 1 cup of granulated sugar
  • 1/4 cup of brown sugar
  • 1 tsp of baking powder
Preheat the oven to 350F.
Sift flour, baking powder together in a bowl.
Whisk eggs, granulated sugar and brown sugar in another large mixing bowl until it gets creamy. Gradually add yogurt, vegetable oil whisking consistently.
Add sifted flour,
baking powder to the bowl and whisk  thoroughly. Add hazelnut, orange zest and chocolate chips to the bowl and stir.

Pour this mixture to a bundt cake pan and bake approximately 60 minutes. Check the cake by inserting  a toothpick into the center. The toothpick will come out clean when the cake is done.

FINDIKLI VİŞNE SOSLU KEK


































HAZELNUT CAKE WITH SOUR CHERRY SAUCE

Ingredients:
  • 2 eggs
  • 1 cup of sugar
  • 1+1/4 cups of milk
  • 3/4 cup of vegetable oil
  • 1+1/2 cup of all purpose flour
  • 1/2 cup of finely chopped hazelnut
  • 1/2 cup of cocoa powder
  • 1/2 tsp of vanilla sugar
  • 1 tsp of baking powder
  • 1 cup of sour cherry juice ( or 1 cup of cranberry juice )

Preheat the oven to 350F.
Sift flour, cocoa powder, vanilla sugar, and baking powder together in a bowl.
Whisk eggs and sugar in another large mixing bowl until it gets creamy. Gradually add milk, vegetable oil whisking consistently.
Add sifted flour,
cocoa powder,vanilla sugar, and baking powder to the bowl and whisk  thoroughly. Add  hazelnut to the bowl and stir.
Pour this mixture to a 10" non-stick round cake pan and bake it for 45 minutes. Check the cake by inserting a toothpick into the center. The toothpick will come out clean when the cake is done. Remove the pan from oven and pour the sour cherry juice all over. Let it cool on the counter top and keep it in the refrigerator. Decorate it with chocolate sauce when you serve.

YABAN MERSİNLİ & SEFTALİLİ KEK


































BLUEBERRY & PEACH MUFFINS

Makes 14 muffins.

Ingredients:
  • 2 eggs
  • 1/2 cup of vegetable oil
  • 2 cups of blueberries (washed and drained )
  • 2 peaces (peeled and  mushed )
  • zest of 1 lemon
  • 1/2  tsp of vanilla sugar
  • 1 cup of granulated sugar
  • 1 tsp of baking powder
  • 2 cups of all purpose flour
Preheat the oven to 350F.
Sift flour, vanilla sugar, and baking powder together in a bowl.
Whisk eggs and sugar in another large mixing bowl until it gets creamy. Gradually add vegetable oil, lemon zest, and peaches whisking consistently.
Add sifted flour, vanilla sugar, and baking powder to the bowl and mix thoroughly.

Add blueberries the bowl and stir.
Pour 2 tbsp of mixture into muffin cups and bake approximately 30 minutes. Check the cake by inserting a toothpick into the center. The toothpick will come out clean when the cake is done.

CEVİZLİ & HAVUÇLU KEK


































CARROT & WALNUT CAKE

Ingredients:
  • 2 cups of flour
  • 2 eggs
  • 1/2 cup of milk
  • 1/2 cup of vegetable oil
  • 1+1/2 cups of granulated sugar
  • 1+1/2 cups of finely chopped walnut
  • 2 cups of shredded carrot
  • 1 tbsp of cinnamon
  • 1 tsp of baking powder
Preheat the oven to 350F.
In a large mixing bowl, take the eggs and sugar and mix it for 5 minutes with a mixer. Add milk and vegetable oil gradually and whisk. Add flour and cinnamon to this mixture and mix them for another 5 minutes. Add carrot and walnut to the bowl and stir them with a spoon until they are well combined. Pour this mixture to a 10" non-stick round cake pan and bake it for 45 minutes. Check the cake by inserting a toothpick into the center. The toothpick will come out clean when the cake is done. Remove the pan from oven and allow the cake cool completely.

    MUZLU KEK


































    BANANA BREAD

    Ingredients:
    • 3 ripe bananas
    • 1 cup of finely chopped walnut
    • 1/2 cup raisins
    • 1/2 cup of brown sugar
    • 1/2 cup of granulated sugar
    • 1/2 cup of milk
    • 1/2 cup of vegetable oil
    • 2 eggs
    • 1 tsp of ground cinnamon
    •  1/2 tsp of baking soda
    • 2+1/2 cups of all purpose flour
    Preheat the oven to 350F.
    Sift flour, cinnamon, and baking soda together in a bowl.
    Whisk eggs, granulated sugar and brown sugar in another large mixing bowl until it gets creamy. Gradually add milk, vegetable oil whisking consistently.
    Add sifted flour,
    cinnamon, and baking soda to the bowl and whisk  thoroughly. In a small bowl, mash the bananas with a fork or process it in the food processor . Add banana, walnut and raisins to the bowl and stir.
    Pour into 9 by 5-inch loaf pan and bake approximately 60 minutes. Check the cake by inserting a toothpick into the center. The toothpick will come out clean when the cake is done.

    *The cake is more delicious for the next day and if you like your cake sweet, you could add a half cup of more granulated sugar.

      FINDIKLI BROVNİ


      HAZELNUT BROWNIE

      Makes 9 squares.

      Ingredients:
      • 1 cup of milk chocolate chips
      • 1/2 cup of whole raw hazelnuts
      • 1/2 stick of salted butter
      • 2 large eggs
      • 3/4 cup of granulated sugar
      • 1/2 cup of cake flour
      • 2 tbsp of cocoa powder
      • 1/4 tsp of baking soda
      • a pinch of salt
      Preheat the oven 350 F. Sift flour,salt, and baking soda together in a bowl. Place two layer of parchment paper in a 8 by 8-inch baking dish, covering the all four edges.
      Take chocolate chips and butter in a large mixing bowl and melt them over boiling water. Take it on the counter top and whisk it. Wait until it gets cooler. Add sugar and whisk. Add first egg and then the second one while whisking constantly. Add sifted mixture to the bowl gradually and whisk thoroughly.Add hazelnuts and stir
      Pour into the baking dish and bake approximately 50 minutes. Check the cake by inserting a toothpick into the center. Do not open the oven for the first half an hour. The toothpick will come out clean when the cake is done.

      ELMALI REVANİ



































      REVANI (SEMOLINA CAKE WITH SYRUP) WITH APPLE

      This recipe is from Yesilkivi. I visit Secil's blog very often lately. Her pictures are so tempting and recipes are wonderful. Thanks again.

      Ingredients:
      • 3 eggs
      • 1 cup of granulated sugar
      • 1 cup of semolina flour
      • 1 cup of all purpose flour
      • 1 cup of finely chopped walnut
      • 2 apples ( grated )
      • 1/2 stick salted butter
      • 1 tsp of ground cinnamon
      • 1 tsp of baking soda
      • 1 tsp of vanilla sugar
      Syrup:
      • 3 cups of granulated sugar
      • 3 cups of water
      • juice and zest of 1/4 lemon
      For the syrup; take 3 cups of sugar, and 3 cups of water in a medium pot. Bring it to the boil over medium heat. Boil for 7-8 minutes. Add juice and zest of 1/4 lemon into the pot and boil for another 5 minutes. Turn the heat off. Set a side.
      Preheat the oven 350 F.
      Sift flour, semolina flour, vanilla sugar, and baking soda together in a bowl.
      Whisk eggs and sugar in another large mixing bowl until it gets creamy. Gradually add butter, sifted flour, semolina flour, vanilla sugar, and baking soda to the bowl, whisking consistently.
      Add grated apple, walnut and cinnamon to the bowl and and mix thoroughly.
      Pour into 13 17-inch rectangular pyrex and bake until it is golden brown, approximately 50 minutes.
      Take the cake from the oven. Let it cool for 15 minutes and spoon syrup over the cake.
      Serve it when it is cool. It is more delicious for the next day.

        • 1/2 cup of brown sugar
        • 1/2 tsp of baking soda
        • a pinch of salt

        JUST AN IDEA




        I sometimes like to make changes with classic recipes. This zebra-striped cake is originally Yogurt Dessert.
        Just divide the cake mixing into two equal parts and mix one of the halves with 1 tbsp of cacao powder . First put 2 tbsp of white cake mixing into the center of the circle cake pan and then put 2 tbsp of chocolate cake mixing in the center of the white cake mixing. Repeat these steps until all the cake mixing is finished.

        Other steps are just the same.

        YOĞURT TATLISI




        YOGURT DESSERT

        Ingredients:
        • 2 eggs
        • 1 cup of granulated sugar
        • 1/2 cup of vegetable oil
        • 1 cup of thick plain yogurt
        • 1+1/2 cups of semolina flour
        • 2 cups of all purpose flour
        • zest of 1 lemon
        • 1/2 tsp of vanilla sugar
        • 1/2 tsp of baking powder
        Syrup:
        • 2 cups of granulated sugar
        • 2+ 1/2 cups of water
        • juice of 1/2 lemon
        For the syrup; take 2 cups of sugar, and 2+ 1/2 cups of water in a medium pot. Bring it to the boil over medium heat. Boil for ten minutes. Add juice of 1/2 lemon into the pot and boil for another 3 minutes. Turn the heat off. Set a side.
        Preheat the oven 350 F.
        Sift flour, semolina flour, vanilla sugar, and baking soda together in a bowl.
        Whisk eggs and sugar in another large mixing bowl until it gets creamy. Gradually add yogurt, vegetable oil,and lemon zest whisking consistently.
        Add sifted flour, semolina flour, vanilla sugar, and baking soda to the bowl and mix thoroughly.

        Pour into 13 17-inch rectangular pyrex and bake until it is golden brown, approximately 50 minutes.
        Take the cake from oven. Let it cool for 5 minutes and spoon cold syrup over the cake.
        Serve it when it is cool.

        LİMONLU KEK



        LEMON CAKE

        This picture was taken last week during the breakfast with my Turkish friends and it makes me smile when I look at it. We enjoyed a lot as always...

        Ingredients:
        • 2 eggs
        • zest and juice of 2 lemon
        • 1/2 cup of plain yogurt
        • 1/2 cup of vegetable oil
        • 1+1/2 cup all purpose flour
        • 1 cups of granulated sugar
        • 1/2 tsp of baking soda
        • 1/2 tsp of vanilla sugar
        Preheat the oven to 350F.
        Sift flour, vanilla sugar, and baking soda together in a bowl.
        Whisk eggs and sugar in another large mixing bowl until it gets creamy. Gradually add yogurt, vegetable oil, lemon zest, and lemon juice whisking consistently.
        Add sifted flour, vanilla sugar, and baking soda to the bowl and mix thoroughly.

        Pour into 12 41/2 by 3-inch loaf pan and bake approximately 50 minutes. Check the cake by inserting a toothpick into the center. The toothpick will come out clean when the cake is done.

        HAVUÇLU KEK




        CARROT CAKE

        This cake is one of my favorites. My oldest sister, Dilek , used to bake it for me when I was single. I am married now and baking this cake to my son and my husband. They like it as much as I do :)


        Ingredients:


        For cake:

        • 3 eggs
        • 3/4 cup of sugar
        • 3/4 cup of flour
        • 2 cups of grated carrot
        • 1/2 cup of crushed walnut
        • 1/2 cup of raisins
        • 1tbsp of ground cinnamon
        • 1/2 tsp of baking soda
        For frosting:

        • 2 cups of milk
        • 3 tbsp of flour
        • 4 tbsp of sugar



        Preheat the oven to 350F.
        In a large mixing bowl, take the eggs and sugar and mix it for 5 minutes with a mixer. Add flour, cinnamon, and baking soda to this mixture and mix them for another 5 minutes. Add carrot, walnut, and raisins to the bowl and stir them with a spoon until they are well combined. Pour this mixture to a 8" non-stick round cake pan and bake for 1 hour.Remove the pan from oven and allow the cake cool completely.
        Meanwhile, in a medium pot, take milk, flour, and sugar for frosting. Mix them with a whisk and turn the heat to the high. Keep mixing until it starts bubbling and starts to be smooth.Turn the heat off allow it cool completly.
        Pour the frosting on top of the cool cake and frost it.
