My Weekend with my new kitchen aid

OK. I LIED!

In my last post, i said that i wasn't going to bake due to exams but you know, i tend to release my stress by baking plus i really really wanted to make full use of my spanking new majestic yellow KITCHEN AID! :P 


*note: my new mixer purchase wasn't just an impulse buy but my trusty cheap mixer died so i had to invest in something larger! prettier! and it had to have my new fav color-yellow!*

First i wanted to spend a couple of hours making Y's favorite Madeira Baby but i also got distracted by vanilla sugar cookies! Oh i hate having the feeling of wanting to do soooo many things in the kitchen in very limited time. I took out the butter from the fridge and sat there thinking of what to do next.... Madeira or Cookies or Madeira or Cookie Madeira or Cookie Madeira or Cookie Madeira or Cookie Madeira or Cookie???????

After all the debate in my head, i ended making both Madeira cake with buttercream meringue and vanilla sugar cookies. That took my whole of Sat and Sun but i'm happy and stress-free!

Madeira Cake Recipe a.k.a butter cake

I really really like this recipe. It's very moist and fluffy, perfect for cream cheese frosting, 7 minute frosting or my all time favorite! swiss buttercream from Smitten Kitchen



Madeira Cake Recipe (8" round, 7" square)
adapted by "the essential guide to cake decorating". I absolutely love this recipe!!! This is great for novelty cakes for kids~~ :p

Ingredients:~
250g softened butter
250g caster sugar
5 eggs
185g plain flour
60g self raising flour
1 tablespoon of milk
baking time: 1 hour and 25 mins

Method:
1. Preheat oven to 160 degrees. Grease tin and line with baking paper.
2. Beat butter and sugar until light and fluffy.
3. Add eggs one at a time. Then remove from mixer, add flour using a spatula or wooden spoon.
4. Lastly stir in milk.
5. Transfer batter to tin. Remember to smooth the surface by using a spatula or try dropping the tin several times on the hard surface to remove air bubbles in batter.
6. Bake for about 1 hour and 25 mins.
7. After baking, leave to cool in the tin for at least 5 minutes, before turning to wire rack to cool.

Later on, i covered the cake with white fondant to hide the flaws of my frosting :p

Yoong the Garfield

Shhhhhhhhhhhhhhhhhh. this is a secret birthday cake for yoong and he's turning 24 this sat!! (officially next week Wed) 
This is the first ever birthday cake i made myself for my boyfriend. I've made many cakes for him to try but never a cake specially for him :p 
So i made sure that i made it extra special this year by making his favorite animal(the cat) as his cake. Hope he'll like it *fingers cross!*

I'm so glad it turned out right. I was so worried before that the orange turned out yuck-ky and ruin my garfield. Wilton colors are definitely trustable~!
