Dhaniya Panjiri for Janmashtami Bhog #Recipe


Its Janmashtami time again and we all are pretty ready with our own way of celebrating Lord Krishna’s birthday or as you may call it Krishna Janm. Janmashtami is observed as a pious day in our life because it is the day when Lord Krishna was born. We make preparations for a lot of dishes and decirations and the prime food offered to Krishna on his birthday is Panjiri.

Panjiri is a sweet dish often referred to as a dessert too. It is made in many variants of wheat flour, semolina, Methi panjiri etc. but the prime ingredient used in the one offered to Lord Krishna is Dhaniya Panjiri. The texture of the dish is like flowing sand but the presence of ghee and a lot of dry fruits keeps it moist and soft for eating. It is not too sweet and so one of the most enjoyed prasads in Janmashtami!

Panjiri is a very rich and healthy dessert perfect for anyone! It just takes a few minutes 
to prepare but the ingredients have to be kept handy. Make sure you bring the best kind of herbal gums which we generally associate with goond ke ladoo. So ‘Goond’ has to be of fine quality for the dish to be really great!

Ingredients

Dhaniya or Coriander powder – 100 grams
Pure Ghee – 4 tbsp
Goond or herbal gums (Sundried) – a handful
Dried coconut (grated) – 50 grams
Almonds and cashews (grated) – 2 tbsp
Powdered Sugar – 2 tbsp

Method

  1. Take the pure ghee in a deep pan and start cooking the dhaniya powder in it. Don’t let the flame to be too high and cook until you get a sweet smell of semi cooked dhaniya powder. Set aside and let it cool for a few minutes.
  2. Take another kadhai and fry the herbal gums or goond in ghee until they pop like popcorns. They will turn light in colour and almost look like popcorns. Crispy and hard! Strain and cool.
  3. Now take all the ingredients in one corner and start mixing them in the quantities mentioned above.
  4. Any ingredient can be taken in excess for want of taste. But mixing of them in this proportion will give you a mildly sweet taste of the rich dry fruits and cooked dhaniya to the optimum.
  5. Yes your Prasad is ready to offer and relish!


Panjiri is easy to customize and more of ingredients can be added or deleted in want of your taste. Let me know what variations did you try!
