That's right people today we are talking about pork. Pork tenderloin to be exact. I've posted this before but didn't go into how I actually prepare it so today I thought I'd post both the detailed instructions but also some instructional videos.
This is one of the easiest (and leanest) roasts you can make. Seriously. As long as you don't overcook it you really can't go wrong here. I have a super simple marinade and spice rub and that's it.... pop it in the oven and you are done! It is virtually hands off. If you haven't made this before or are new to the kitchen the videos are worth watching... there's a lot of information in them that won't be included in the recipe.
Pork Tenderloin
1 pork tenderloin (about 1.25-1.5 lbs)
1/4 c worcestershire sauce
ground thyme
salt
pepper
meat thermometer
At least 30 minutes before cooking (up to overnight) place the pork tenderloin (trimming it of any excess fat if need be first) in a zip top bag and cover with the worcestershire sauce. Turn the bag to coat the meat and then place in the refridgerator until ready to cook.
Preheat your oven to 375 F.
Remove the tenderloin from the marinade and pat dry. Shake salt, pepper, and thyme onto the meat and coat evenly.
Place the tenderloin in a roasting dish or pyrex pan. Place in oven and cook for approximately 25-30 minutes until a meat thermometer reads 142 F. Take the meat out and let rest for 5 minutes before slicing. The temperature should continue to rise and should reach about 150 F this will be "medium" and is how pork should be served. Take the temperature up to 160 F if you want it to be well done, dry, and grey ;)
Each 4 oz portion is 185 calories
Cooking Notes:
Trichinosis is killed off at 137 F. Trust me pork is much better when it is still tender.

The videos were priceless;) I can definately feel your pain-if it isn't Ella yelling or singing at the top of her lungs it is Conner debating every fricken thing I say and wondering why I am irritated or why I think he is arguing with me, yesterday it was split between teenage angst over homeschool prom and Langston crying and wailing every 5 minutes because life isn't fair,I think it was his time of the month. I need one of the thermometers, my pork always ends up overdone.Are they pricey? Anyways,the Dr Pepper was hilarious,my vice of choice when I'm feeling looney tunes is Diet Pepsi Max...so bad but man do I love it.
Today it is Ella. She is singing Snuggle Puppy from Philadelphia Chickens alternating with her famous rendition of cinderelly,cinderelly nighty beauty cinderelly...LOUD. Lord help me.
i ought to get that book because whenever i serve pork and it's a little pink in the middle, my husband won't eat it. he thinks it's undercooked although IT'S NOT! if i had that book, i could show him! how great would that be? i like the way you cooked that tenderloin - it looked totally easy and delicious too!

Oh, we don't get the non-stop singing in this house with my 2 wild boys, it is the LOUD LOUD LOUD playing and fighting...sometimes for fun (but someone always gets hurt) and sometimes for real.
I am actually going to make that pork this week hopefully. I am making the long trek to Whole Foods (1 hour drive EACH way!) to pick up some stuff...I will be on the look out for the cranberry horseradish and will pick up some haricort vert(love them...served them with a Prime Rib at Christmas).
My kid was RIVETED to the "take one" version of the pork tenderloin video. Priceless. We particularly enjoyed the part about not wrapping the jumprope around Baby's neck.
Hubby will not eat pork. Not at all. In fact, he will only eat beef (no ribs, though), chicken and white fish. That seems like grounds for divorce, doesn't it? Oh, all right, I'll keep him. He's fine otherwise

I think mine was about $20 at BBB (you know those 20% coupons never really expire and you can use one for every item you are buying right? You really never need to pay full price there!)

Oh the loud singing... I know it well. I'm cool with it before 4 PM... after 4 and I want to kill myself ;)
But if you cook it for 30 minutes you'll be fine... maybe a little overdone but not ruined.

I'm new to your blog and am enjoying getting to "know" you. I'm trying to loose some excess pounds and love blogs such as yours...they've been a tremendous inspiration to me.
Just finished your "I can't relax" video...and wanted to leave a comment...leaving it here because not sure if you'd see it on an older post.
Just obeserving you briefly via video and written post my take is this: you are unable to relax because you are overstimulated.
Your plate is full...very full...and you have a lot that needs doing every day, almost 24/7. And being the "high performer", at least that is my perception of you, you do what it takes to get it done.
I think until your life slows down you will find it difficult to relax...you are a mom, with small children, one who has some serious health issues, and you run a home and all that it entails...in addition to whatever else you do that I don't know about because I am new to your blog.
I think you'd find, if you could take a few days off, go somewhere alone with no schedule, you would at some point be able to relax...it would be difficult at first...likely take a day or two just to get used to the idea of doing nothing...(your body is programmed on auto pilot right now...deprogramming would be necessary).
I imagine it's not a likely option for you to have several days on your own...so at best you can set a time each evening when you must "quit" for the day. And for the next 2 hours you must stretch out on the sofa or in the bed and do something that is relaxing---that is not mentally stimulating...
For me, it is watching mindless TV...or reading...
I find that if I do not have a 2 hour window every night prior to bedtime I am unable to relax enough to go to sleep.
If necessary I do on occasion take an OTC sleep aid.
I've been told by my primary care doctor that sleep is critical when it comes to health.
Hope this gives you some insight...I have children your age and hopefully have learned a thing or two that might help some young women/young mothers.
Take care of yourself...you are taking care of everyone else, they depend on you...but if your health and well being fails, you won't be able to be there for them.
Finally, I want to add that I lean on God and find my rest in Him ....Jesus said "my yoke is easy, and my burden is light"...when I find myself overwhelmed I look to Him for strength and grace knowing He is a present help in the time of trouble, whether it be serious illness in the family or the washer breaking down when the laundry is piled up.

Sorry the appointment didn't go as well as hoped for.I'd be happy to give any advice you may find helpful,I think Ruby is pretty close in age to Langston.We have tried a few different things and I have a lot of friends who homeschool and are real pros,as opposed to me,the real nut job goofball ;)

Your assessment is pretty spot on.
I think I actually find the weekends more stressful since Mr F is home and I *should* be able to get more stuff done. I never would have posted that on a Monday. Monday's I am home with the girls and I don't do anything out of the house... it is my most peaceful day (sometimes productive sometimes not).
I think picking a time when I'm done at night is a good idea. I need to try and tune out the sound of my email dinging telling me I have new comments though ;)

In other cooking news, I made the tomato meatball soup, and reluctantly shared it with my husband, and then growled at him when he didn't finish it all. I literally ate the rest of it. That night. The salt cravings are *hilarious* at this point.
