Classic Old Fashioned Meatloaf



Ingredients:

2 lbs. hamburger
1 cup saltine cracker crumbs (oatmeal or bread crumbs)
1/2 cup onion, chopped
1/2 cup bell pepper chopped (my addition)
2 eggs
3/4-1 cup evaporated milk (whole milk or half and half)
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon ground coriander (my addition)
2 cups of water
1 cup ketchup


Directions:


Preheat oven to 350 degrees F. Spray a 10-inch cast iron skillet with a non stick cooking spray; set aside. In a large bowl, combine all the above ingredients, except for the water and ketchup, and mix together until well blended. Be careful not to handle the meat mixture to much. Shape into a round bun and place in the cast iron skillet. Pour water half way up in the skillet. Bake in the oven for 1 hour or until meatloaf is done. Spoon ketchup over the meatloaf and return to the oven for another 15 minutes.

Meat Loaf


Ingredients:

1 lb lean ground beef
2 eggs, beaten
1 cup oatmeal or saltine crackers
½ cup chopped onion
½ cup chopped celery
½ cup chopped tomatoes
½ cup chopped green pepper
1 shredded carrot
3 Tbsp. ketchup
chili powder, salt and pepper


Directions:

Mix well, with your hands ground beef with veggies, oatmeal and place in loaf pan. Top with ketchup and spices. Bake at 400 degrees for 40 to 45 minutes.

Variations: top with BBQ sauce or cook without sauce and top with gravy.

Use any veggies of choice, spinach, corn, broccoli, Brussels sprouts, add mushrooms.

Bake in muffin tins for individual meat loafs for half the time….,

Pepper Jack Meat Loaf



Ingredients:

1 lb ground beef, turkey or chicken
1 cup celery, diced
½ cup onion, diced
1 cup oatmeal or crumbled saltine cracker
2 eggs
2 cups pepper jack cheese shredded
¼ cup ketchup
1/8 tsp chili powder
Salt and pepper

Directions:

Preheat oven to 400 degrees F. Grease a loaf pan.

Mix meat, celery, onion, oatmeal or crackers, eggs together well. Press half of the meat mixture into prepared loaf pan. Place cheese over meat mixture. Top with remaining meat mixture and press down to seal. Spread ketchup over top of meat loaf….sprinkle with chili powder, salt and pepper.

Bake, covered lightly with foil, for 30 minutes.

Increase oven temperature to 425 degrees F, remove cover and continue to bake for 20 minutes or until edges are bubbling and knife inserted in center comes out clean.

Let sit for 5 minutes then slice and serve.
