Super Simple Peachy Barbecue Chicken

Ingredients:
  • 2 1/2- 3 pounds chicken drumsticks, skinned (if desired)
  • 1 cup barbecue sauce
  • 1/3 cup apricot or peach preserves
  • 2 teaspoons yellow mustard
  • Fresh peaches, cut into wedges (optional)
Directions:

1.  Place chicken in a 3 1/2- or 4-quart slow cooker. For sauce, in a small bowl, stir together barbecue sauce, preserves, and mustard. Pour over chicken.
2.  Cover and cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours.
3.  Transfer chicken to a serving dish; cover and keep warm. Transfer sauce to a medium saucepan. Bring to boiling; reduce heat. Simmer, uncovered, about 10 minutes or until sauce is desired consistency. Serve chicken with sauce. If desired, garnish with fresh peaches.

Tip:

  • For easy cleanup:

    Line your slow cooker with a disposable slow cooker liner. Add ingredients as directed in recipe. Once your chicken is finished cooking, spoon it out of your slow cooker. Once the food is out of your slow cooker liner, simply dispose of the liner. Note: Do not lift or transport the disposable liner with food inside.

Slow Cooker Cranberry Barbecue Meatballs

Slow-Cooker Cranberry Barbecue Meatballs
Tart cranberry-orange and zesty barbecue sauces coat tasty homemade meatballs that are conveniently kept warm in a slow cooker.
  • Prep Time: 30 minutes
  • Total Time: 3 hour 50 minutes
  • Servings: 24
Ingredients:

Meatballs:

1        lb lean (at least 80%) ground beef
1/2     lb ground pork
1        medium onion, finely chopped (1/2 cup)
1/4     cup Progresso™ plain bread crumbs
1/2     teaspoon ground mustard
1/2     teaspoon seasoned salt
1/8     teaspoon pepper
1        egg

Sauce:

1        cup barbecue sauce
1/2     cup cranberry-orange sauce (from 9.2-oz jar)
1/2     teaspoon ground mustard
1/2     teaspoon ground ginger
1/2     teaspoon salt
2        tablespoons chopped fresh parsley
Directions:
  • Heat oven to 375°F. Spray 15x10x1-inch pan with cooking spray. In large bowl, mix all meatball ingredients. Shape into 1-inch meatballs. Place in pan. Bake 15 to 20 minutes or until no longer pink in center and juice is clear.
  • In 2- to 2 1/2-quart slow cooker, mix all sauce ingredients except parsley until well blended. Add meatballs.
  • Cover and cook on Low heat setting 2 to 3 hours or until thoroughly heated. Stir in parsley. Serve meatballs with cocktail forks or toothpicks. Meatballs will hold on Low heat setting up to 2 hours; stir occasionally.

Barbecue Baked Beans

Homemade baked beans are one of the best comfort foods, and they make a fantastic lunch main. Serve baked beans with corn bread on the side and you're done, or pair with meats or dark greens for a lunchtime comfort food fest.

Ingredients:
  • 1  28  ounce can baked beans, drained
  • 2  16  ounce cans butter beans, drained
  • 2  16  ounce cans navy beans, drained
  • 1  10  ounce can barbeque beef
  • 1/2  cup chopped onionsee savings
  • 1/2  cup lightly packed brown sugar
  • 1/2  cup dark corn syrup
  • 1/4  cup prepared mustard
  • 1/4  cup barbecue sauce
Directions:

1. Preheat oven to 350 degrees.
2. In a large bowl, combine all ingredients. Spoon into a lightly greased 3-quart baking dish.
3. Bake uncovered for 1 hour, stirring once.
