Kalua Pork


Alas, I'm without a camera and having technical difficulties downloading pics from my phone. So here you go...

I guess technically the dish itself won't be done in an hour, but the prep and cooking can be done in 5-10 minutes, so how can you argue with that?

Adapted from the Kalua Pork recipe on melskitchencafe.com, I changed the quantities and added some things...

2-3 lb pork roast
1/2 cup liquid smoke
1/4 cup apple cider vinegar
1/4 cup chicken broth
1/4 cup brown sugar
2 Tbsp salt

Pour broth, liquid smoke, and vinegar into crock pot. Rub salt and sugar into roast and place in crock pot on low 8-10 hrs. Shred and serve over brown rice, couscous, whatever. It was delish and really had a great smoky flavor.

I'm also trying out a copy cat recipe for Cafe Rio pork burritos this week, so I'll keep you posted. Obviously, it's easiest to just run over and order one, but I'm thinking of all you poor unfortunate souls that live out of state.
