White Chocolate Biscuits

My angel, Tihani has Phonics on Wednesdays. And since last week, Wednesday, she has been requesting me to whip her something. She requested for pasta last Wed and I made pasta for her. And this week she had asked me to bake her cookies.

I just bought myself yet another cookbook called Everyday Chocolate. And so I flipped through the pages, trying to look for the most easiest cookie recipe of them all and found White Chocolate Biscuits. Really easy coz it only needed 7 ingredients and I have all of the ingredients that were called for except for Brazil nuts .. was I supposed to go Brazil to get them nuts?? Really NUTS!! .. ehehe

So here is the recipe adapted from the book Everyday Chocolate :-

Ingredients

125 gm butter, softened
125 gm soft brown sugar, firmly packed (I used about 100gm caster sugar)
1 egg, lightly beaten
200 gm self raising flour
pinch of salt
125 gm white chocolate, roughly chopped (I used white choc chips)
50 gm Brazil nuts, chopped (I opted this out)

Method

Preheat oven to 180C.
Beat butter and sugar till creamy.
Gradually add eggs, beating thoroughly after each addition.
Fold in sifted self raising flour.
Then fold in chopped milk chocolate.
Place teaspoonsfuls of mixture on a non stick pan. Ensure room for spreading.
Bake for 15 mins until golden brown.
Leave in pan for a couple of minutes then turn out into a wire rack to cool.

Simple enough a recipe?? Why dont you go try bake some .. ;-)

Almond Hearts?!?!

Remember the Almond Cookies that I made for my mum?? I made a small batch of those for myself. This time round I used a heart shaped cookie cutter .. should I name these Almond Hearts?!?!?! .. hahaha.

Cornflakes Crunchies & Basic Chocolate Chip Cookies

I took half day leave today. Went to Jason's at Raffles City Mall to get some ingredients to make another Hari Raya goodie. Got back home, changed to comfy home clothes and started to make Cornflakes Crunchies. This is another recipe which I got from Resipi.net. I remembered mum used to make this cookie when I was younger.

Ingredients

105 g butter
1 cup sugar
1 cup self-raising flour, sifted
1 egg yolk
20 g raisins, chopped and drizzle a bit of flour to avoid the raisins from sticking to each other
1 cup cornflakes, crushed

Method

Cream butter with sugar.
Add in egg yolk and continue beating till fluffy.
Add in the sifted dry ingredients, bit by bit.
Fold in raisins and crushed cornflakes.
Spoon teaspoonfuls of soft dough onto a tray.
Bake in a preheated oven at 170 c for about 20 - 25 minutes.

Well dat wasnt all, after I was done baking Cornflakes Crunchies, I made a small batch of basic Chocolate Chip Cookies too. Tihani still enjoy these the best .. hehehe

1 cup chocolate chips (i used black and white choc chips dis time round)

Method

Preheat oven to 180C.
Beat butter and sugar till creamy.
Gradually add eggs, beating thoroughly after each addition.
Fold in sifted self raising flour.
Then fold in chopped milk chocolate.
Place teaspoonsfuls of mixture on a non stick pan. Ensure room for spreading.
Bake for 15 mins until cook.
Leave in pan for a couple of minutes then turn out into a wire rack to cool.

Almond Cookies

Today my patience was really being tested by my two angels. When I managed to get the younger one to take her afternoon nap, I quickly get started with the cookie making.

And today I made Almond Cookies for my mum. I got the recipe from someone who shared it at Resipidot.net. The cookies turned out really crunchy and yummy.

I brought it to mum's earlier and my sis in law tried and gave good remarks .. ;-) .. she said it was nice.

Ingredients

125 gm butter
1/3 cup caster sugar
1 egg yolk
1 tsp vanilla
60 gm ground almond
1 1/2 cup self raising flour, sifted

almond nibs
egg yolk for washing

Method

Preheat oven to 170C
Cream butter and sugar.
Add egg yolk and vanilla essence and beat again.
Then add in ground almond and self raising flour.
Roll dough and cut into desired shape using a cookie cutter.
Brush with egg yolk.
Bake for about 15 minutes.
Cool and then keep in air tight container.

Cheesy Stars

Today is Saturday so I only work for half a day. I went straight home after work, cleaned the house a lil and then start making cookies. I made Cheese Cookies today using a star shaped cookie cutter, hence naming it Cheesy Stars.

Ingredients

125 gm butter
1 2/3 cup flour
50 gm cornflour
125 gm cheese, grated
1 small egg, beaten
pinch of salt

Method

Preheat oven to 160C.
Mix both flours together with salt.
Add butter using rub-in-method.
Then add in the grated cheese and mix well.
Lastly add a beaten egg.
Roll dough and cut into desired shape using a cookie cutter.
Brush with egg yolk.
Bake for about 25 - 25 mins or till golden brown.

Chocolate Coated Cornflakes

Tonite I made for my mum Suji Cookies - recipe posted on 8 Oct.

My sis came at about 9pm to lend me a helping hand and we both made another easy peasy stuff, i.e. Chocolate Coated Cornflakes. The recipe given below is for a small batch. My sis and I made twice as much as the recipe given below.

Ingredients

250gm coating chocolate (i used Tulip brand)
150gm cornflakes (i used Nestle brand)
hundreds and thousand for sprinkling
paper cups

Method

Melt coating chocolate using double boil method.
Once it has melted, put in the cornflakes and mix well.
Spoon into paper cups and sprinkle with hundreds and thousands.
Air dry and then keep in an airtight container.

White Choco Pops

Yesterday, I continued with my cookie making project for Eid. To be frank, I was still feeling super lazy to bake anything. I made something tho, i.e. White Choco Pops. Another super easy stuff to make. I think even my angel can make them with eyes closed .. hehehe .. ahhhhhhhh .. wat the heck .. I told ya .. I havent any mood to bake yet!

Ingredients

220gm choco pops
400gm white couverture chocolate
chocolate rice
paper cups

Method

Melt white chocolate couverture using double boil method.
Once white choc has melted, pour in the choco pops and mix well.
Spoon mixture into paper cups.
Sprinkle top with chocolate rice.
Air dry or may be put in fridge for choc to dry.

Suji Cookies

Today is the 15th day of Ramadhan. I am down and out .. the flu bug kept hitting on me .. sigh ..
It kinda dampen my spirit but I try to be strong. Syawal will come in 2 weeks' time and we will be celebrating Hari Raya Eidilifitri.

Wats Hari Raya without the goodies rite? So today, I made a small batch of Suji Cookies. My mum taught me to make this and it is really easy to make - only 4 ingredients.

Ingredients

150g ghee (dats a small tin of ghee)
a tin of caster sugar (use the same ghee tin to measure)
self raising flour, sifted (just enough to form a firm dough)
a pinch of salt

Method

Preheat oven to 170C.
Cream ghee and sugar.
Then add a pinch of salt and mix well.
Lastly, add enough flour, mix till mixture forms a firm dough.
Shape mixture into marble like rounds and place on non stick tray.
Bake for 25 mins or until the top of the cookies start to crack.
Leave cookies in tray for a couple of minutes before turning it out to cool on a wire tray.

BBM - Parcel's Out

Well, the deadline to send out our package is today, 15 Sep 06. I managed to send it out on time.

A list of about 15 items were included in the package and I really hope my swap partner is elated to receive them .. well, who wouldnt be happy to receive a parcel, right?? So hang in there partner, whoever you are, the parcel's gonna reach you in 7 to 9 days' time.

To Stephanie of Dispensing Happiness .. my hats off to you for making this BBM possible!

This is the parcel that I sent out ..

Oh ya, one of the stuff that my swap partner is going to receive is something that I baked, i.e. Chocolate Chip Cookies. I really hope the cookies are still fresh when my swap partner receives them.

Ingredients

125 gm butter
1 cup caster sugar

11/2 cups self raising flour
1 cup chocolate chips (i used a mix of semi sweet and milk choc chips)

Method

Preheat oven to 180C.
Beat butter and sugar till creamy.
Gradually add eggs, beating thoroughly after each addition.
Fold in sifted self raising flour.
Then fold in chopped milk chocolate.
Place teaspoonsfuls of mixture on a non stick pan. Ensure room for spreading.
Bake for 15 mins until cook.
Leave in pan for a couple of minutes then turn out into a wire rack to cool.

Cookies for Tihani's Teachers!

It is Teacher's Day tomorrow .. I was indecisive .. should I bake or should I not? but I wanna give Tihani's teachers a lil something to show my appreciation. I was afraid that if I were to bake, it wouldnt turn out well.

The clock showed 5.30 pm .. I was still undecided.

After work just now, I went to Parkway Parade (PP) to buy cookies from Famous Amos and get them packed in a nice lil package for Tihani's two teachers - Teacher Ainn and Teacher Zai.

I reached home, took out the butter from the fr
eezer, went thru one of my cookbooks and started to whip Triple Choc Cookies, which have a combi of cooking choc, cocoa and choc chips in it.

Haha .. i must be crazy to have done this but I did .. i wanted the teachers to have something home made .. oh ya, i even made them self made cards too.

Ingredients

125 gm butter
1 cup caster sugar
3 eggs lightly beaten
11/2 cups self raising flour
2 tbsp cocoa powder
2 squares cooking chocolate
1/2 cup semi sweet choc chips

Method

Preheat oven to 180C.
Melt butter and cooking choc in a microwave oven or using double boil method.
Gradually add eggs, mix thoroughly after each addition.
Fold in sifted self raising flour and cocoa powder gradually. (I used my hands to fold)
Then fold in choc chips.
Place teaspoonsfuls of mixture on a non stick pan. Dun forget to space out for spreading.
Bake for 13 mins until cook.
Leave in pan for a couple of minutes then turn out into a wire rack to cool.

Chocolate Milk Cookies

My family haven't any plan for today so I thot why not bake some cookies for the kids. I used exactly the same ABC recipe but omitted the almonds and semi sweet choc. I used chopped milk chocolate. So this I call, Chocolate Milk Cookies. Tihani wants me to bring to her kindy this coming Tuesday to share with her friends .. hehe .. ;-)
Ingredients

125 gm butter
1 cup caster sugar
1 egg, lightly beaten
11/2 cups self raising flour
3/4 to 1 cup chocolate, chopped (I used Cadbury's milk chocolate)

Method

Preheat oven to 180C.
Beat butter and sugar till creamy.
Gradually add eggs, beating thoroughly after each addition.
Fold in sifted self raising flour.
Then fold in chopped milk chocolate.
Place teaspoonsfuls of mixture on a non stick pan. Ensure room for spreading.
Bake for 15 mins until cook.
Leave in pan for a couple of minutes then turn out into a wire rack to cool.

My Yummy ABC - Almond Brownie Cookies

I have to admit this is the best choc cookies dat I have ever made and I will stick by this recipe.

I made ABC - Almond Brownie Cookies yesterday. Actually my initial plan was to bake either a Marble Cake or Zebra Cake. I took the butter out from the fridge to put to room temperature but when the time comes to start baking, I ended up making ABCs.

Personally, I really found em cookie-licious .. totally different from the choc cookies I've ever made and this is the first time that I enjoyed eating my cookies.

I simply love baking this kinda cookies .. u put teaspoonfuls of the mixture and the cookies will spread when you bake em. Ironically, I felt making these are as easy as ABC too .. as the name suggests .. hehehe

Oh ya .. I did earn some brownie points from colleagues who tasted my ABCs. One wanted to order for Hari Raya. ORDER?!?!? Whoa .. is she for real or wat?!?!? Well, I would be most glad to take orders .. ;-)

And now, we move on to the recipe:-

Ingredients

1/2 cup almond nibs, roasted
125 gm butter
1 cup caster sugar
1 egg lightly beaten
11/2 cups self raising flour
2 tbsp cocoa powder
1/2 cup semi sweet choc chips

Method

Preheat oven to 180C.
Beat butter and sugar till creamy.
Gradually add eggs, beating thoroughly after each addition.
Fold in sifted self raising flour and cocoa powder gradually. (I used my hands to fold)
Then fold in the almonds and choc chips.
Place teaspoonsfuls of mixture on a non stick pan. Dun forget to space out for spreading.
Bake for 15 mins until cook.
Leave in pan for a couple of minutes then turn out into a wire rack to cool.
