PAN FRIED SALMON WITH BROCCOLI-PRAWN RICE


PAN-FRIED SALMON WITH BROCCOLI-PRAWN RICE


I love preparing very colorful dishes and vegetables do the tricks. Not only are they healthy, but also makes the dish very attractive and tasty as well.

This dish is a delightful combination of pan-fried marinated salmon with juicy prawn, tomatoes, broccoli and rice.



INGREDIENTS


Salt
Prawns
Broccoli
Tomatoes
½ lemon
Spring onions 

½ Red onions
½ white onions 
Garlic granules
Black peppercorns
2 teaspoon of olive oil
4 pieces of salmon fillets
I teaspoon of Knorr aromat
1 tablespoon Curry powder
1 tablespoon of sunflower oil/veg oil
1½ cups of long grain rice
2 knorr cubes
 



   

PREPARATIONS

Lay the salmon fillets on a tray, sprinkle salt on them. Pat the salmons with your fingers. Then sprinkle the knorr aromat all over the fish, pat them in as well. Sprinkle the peppercorns and finally squeeze and sprinkle the lemon on them. Transfer the salmons onto a bowl and cover with cling film, put into the fridge and allow marinating for 4 – 5hrs.

In a medium pot, pour in about 1700ml of water and bring to boiling. Wash the rice with warm water and add into the boiling water. Add a cube of knorr and pinch of salt; allow boiling till the rice is done. Drain the water and run cold water on it, so the heat doesn’t cook it any further. Set aside

Please remember to turn the rice at some point so it cooks properly and water must be above the rice level, just like when one boils spaghetti.

Trim the broccolis. Core the tomatoes and cut into chunks. Slice the spring onions and onions. Set aside.

In a frying pan, put in the prawns, add pinch of salt. Cook for about 1 mins. Take out the prawn and pour the water from the prawns into a small soup plate. Turn on the oven to 150 degrees.

Heat up the pan, pour in 1 tsp. olive oil, and allow heating for few seconds. Add the onions, stir-fry for some seconds. Then add the prawns, add ½ knorr cube and fry for about a minute.

Add the tomatoes and spring, fry for 3 minutes. Turn of the gaslight and then add the broccoli. Put into the oven and allow cooking for 5 minutes.

In a wok, pour in the sunflower oil, allow for some seconds to heat up. Add the onions, ½ knorr cube and then the rice and curry.  Fry for about 3 – 4 minutes until the curry mixes well. Taste and add pinch of salt if not satisfied.

Add the vegetables onto the rice, 2 tablespoons of the water from the prawns. Cover with the lid and allow cooking on a medium gas heat for 2-3 minutes.




For salmon



In a grill pan, add 1 tsp. of olive oil. Allow heating, the fry the salmons for 2 mins each bottom/top and 1 minute each on the sides. Serve with the rice.

SIMPLE COCNUT RICE N BEANS





I am an expert when it comes to rice dishes. Rice is actually one of favorites and my obstacle to losing weight. I prepare two rice dishes every week. This recipe is simple really.

SIMPLE COCONUT RICE BEANS
 
Ingredients

2 cups of long grain rice
½ cup Nigerian sweet beans
2 knorr cubes
Salt
Whole chicken or beef or fish
Coconut milk
Crayfish
Pepper – optional
Olive oil
Green pepper
Onions
Ginger

Butterfly Chicken

Blend green pepper, small ginger, onions, and 1 cube of knorr and 2 tablespoons of olive oil. Put the chicken in a bowl; pour the mix on the chicken. Cover and put into the fridge to marinate overnight.
Roast in the oven for an hour 25 mins 170 degrees the next day.   


Beans



For the rice

In a medium pot, add water and bring to boiling. Once boiled, add the rice and boil for 5 mins, drain with water with a sieve and set the rice aside.

Wash the pot, pour the coconut milk in, add 100mls of water and bring to boiling. Wash the crayfish with warm water and blend with the onions and pepper.  Add 2 cubes of knorr and salt. Taste, add more salt if you need to.

Cover the pot and allow boiling, so the ingredients all mix together. Add the rice, allow boiling for 2 mins, and then turn the gas to the lowest so the rice soaks up the water. Turn the rice time and again so to ensure the heat goes round evenly. This could take about 15mins.

Turn and serve hot with the Roasted chicken

COCONUT VEG GRAVY




Ingredients





Chicken
Mushrooms - sliced
Carrots – cut in cubes
White/Irish potatoes – cut in cubes
Curry
Garlic
Thyme
Knorr cubes
Chicken fillet – cut in cubes
Spring onions
Onions
2 tablespoon Sunflower oil
Green, yellow and green paprika
Green peas
Coconut milk
Pinch of salt
3 tablespoons of flour
Salt
fresh pepper - optional



Method
 
For the meat – chicken

Season the chicken with 2 cubes of chicken, thyme, curry, onions, garlic and salt
With little water, boil the chicken until done
Fry the chicken and keep the stock for later

In a pot, add the sunflower oil. Turn on the gas heat
Once the oil is hot, add the chicken fillet
Fry for about 3 minutes, then add the, pepper, onions and spring onions
Stir for some seconds; add the potatoes, mushrooms then the green peas, carrots and a knorr cube
Fry for 6 minutes, add the coconut milk and 1/3 cup of water; stir and taste
Add the flour, stir, cover the lid and bring to boiling
Allow boiling for the next 5-6 minutes until thickened.
Taste for salt and serve!

BELLA RICE





There are various ways to prepare rice dishes. My siblings and I invented these recipes I would be sharing today. I don’t know if you ever tried this growing up, those days when parents go out for a very long time and the naughty one decide to cook something quick and easy for themselves – most often is rice, with palm oil, since vegetable oil was precious and always invisibly marked by Mama... This is something children do sometimes without authorization. Done in a hurry, fewer ingredients used but tastes exceptionally good. The feeling of this taste was recorded in my salivary gland. So I thought I should give my family a treat of something I discovered in infancy and my husband loved it. So here we go…

BELLA RICE



INGREDIENTS

2 cups of long grain Rice
Palm oil
Dry fish
2 tablespoons Vegetable oil
2 bulbs of Onions
Tomatoes
3 Knorr cubes
Meat - Beef
Pepper
Salt
Spinach
Curry
Thyme

METHOD

MEAT:

  • Put the meats in a pot, season with curry, thyme, 2 Knorr cubes, pinch of salt and cut in ½ onion.
  • Cook until done, and then fry.
  • Set aside for serving
  • Leave the meat stock in the pot for later
  • Wash the dry fish with warm water and salt. Set aside

RICE:

  • Blend the tomatoes, pepper and ½ onion together
  • Pour the mix into a pot, put on the gas heat and allow cooking until there is no water left
  • Add into the pot about ½ cup of palm oil {depending on the quantity of the tomatoes}, 2 tablespoons of vegetable oil and slice in ½ onion
  • Add a cube of Knorr, the washed dry fish and allow cooking for about 12 minutes
  • Add water about 1200 mls and the meat stock {you can add more water or less depending on the quantity of rice}
  • Taste for salt if satisfied, if not add pinch of salt then cover the pot and allow boiling.
  • After 2 minutes, add the rice; allow boiling for another 2 minutes {water level should be a little above the rice level}
  • Turn the gas heat to the lowest, cover the pot and allow the rice to soak up the water
  • Slice in the remaining onions after 5 mins
  • In the next 5 minutes, stir the rice so it cooks evenly
  • Once all the water is soaked up and the rice is done, turn off the gas
  • Serve on a bed of spinach with meat.

EGG-FRIED RICE - The way you love it!




Egg-Fried Rice with bbq chicken
2012, new target! Just like any other person, I set target for myself as per weight issues. At the end of the target month, nothing tangible was achieved.  And I wondered y? I do my exercises, I walk, I climb stairs… what have I not done; yet this baby weight has definitely refused to vanish.

I was moaning to myself about the headache of this weight burden and a friend said to me in class, “Belle, how can you lose weight when you cook all these nice foodies, not possible my friend” and it just hit me hard, yes! This is it…
  
Food! Food!! Food!!! I love cooking. I remember those years of living with my “dee m n’aka manager” @Zitera, she used to set targets for herself and still does, you know. But by the time she gets back from work and dinner served * very little portion she usually asked for * but she ends up eating more than required. She will be like, Belle please stop cooking this delicacies but how will I ever stop? I MISS THOSE YEARS!

Now, I try to remain fit by eating healthy… Healthy Living – cutting down weight while enjoying very good food. So, I got this new target for 2012 – the preparation of healthy weight lost tasty foods.

I have loads of recipes to share on Healthy tasty foods this 2012. Today, I would be sharing with you guys my very own recipe for Egg-Fried Rice with barbecued chicken. This particular fried rice is the best I have ever cooked. The way we ate it, I could only wonder, if I would ever meet my targeted weight, because what matters in weight lose is the amount of food we eat – quantity. Here comes the process for the preparation of this Egg-Fried Rice:


INGREDIENTS

  • 1 and 1/2 cups of Basmati rice (any other rice can do)
  • Sunflower oil or vegetable oil
  • 4 cubes of Knorr
  • Eggs
  • Spring onions
  • Onions
  • Red pepper
  • Pepper
  • Soy sauce
  • 1 stick of carrot (depending on the amount of rice)
  • Curry
  • Thyme
  • Garlic
  • Peas
  • Chicken or beef
  • Garlic and ginger
  • Heinz Barbecue mix








Preparations

Rice: to be prepared first because we wan the rice to be loose


Wash the Basmati rice, sieve and set aside
In a medium pot, pour in water and bring to boiling
Pour the rice in and the water level should be a little above the rice level
Put in a cube of Knorr and a tablespoon of curry, again this depends on the amount of rice and how yellow you want it…
Then reduce the gas heat to the lowest and allow cooking
Stir for like every 5 mins so to be sure the heat reaches all the rice. * am rubbish with keeping time while cooking *
Once you are convinced the rice is cooked to your satisfaction and the water dried, turn off the gas.
In a large sieve or a big bowl, transfer the rice and allow cooling.
* Make sure you spread them out to allow cooling fast and avoid sticking together *
If you are using normal rice, cook like you usually do but make sure the rice doesn't suck too much water...we need it loose, not too stick for perfect result.
Set aside.

Meat:

In a pot, put in your meat and spice it with the curry, thyme, and 2 cubes of Knorr. 
Add very little water and cook.
Once done, drain the water and rob the bbq mix on the chicken
Set in the oven and grill (I love using my halogen oven)
Grill until the skin is crispy.



Fried rice preps

Cut the carrot, spring onion, pepper and red pepper.
Roughly chop the onions
Crack in the eggs into a bowl and spice with half the Knorr
Then fry.
Once done, roughly chop it too.

In a frying pot or a pot, put in a table spoon of sunflower oil
When the oil is hot, put in the onions, pepper and spring onions 
Add the remaining half cube of Knorr
Followed by the carrot, peas and red pepper
Stir fry for about 2 mins and transfer the veg in a plate

In the same pot, pour in a tablespoon of sunflower oil
Allow to heat up and pour in the rice and add a tablespoon of soy sauce
Stir fry, once the rice is heated up
Add the veg and the fried egg
Stir so all gets hot and your egg-fried rice is ready.
Serve with the bbq chicken









 if you noticed, i used no salt. the maggi contains enough salt already. try reducing the amount of salt intake, too much of it is unhealthy.
