Banana-Strawberry Waffles
I don't know what it is about Sundays, but I almost always wake up wanting pancakes or waffles. ESPECIALLY now that I'm pregnant, if I get something in my mind that I want to eat, I just gotta have it. Today, it was waffles. Thick, fluffy, Belgian waffles, with fresh banana and strawberry. Numnumnum. ;-)
This recipe is simple and easy to throw together on a lazy weekend morning.

Smoothietude Contest!
I love smoothies, especially when the weather starts to get warmer. They are so refreshing, and- if done right- filling, nutritious, and delicious too. Plus, they are quick and easy. I learned the great trick of using frozen banana in smoothies to help make them thick & creamy from Kathy from Healthy.Happy.Life., and when I saw her smoothietude contest, I thought I'd finally enter one of these things (especially since the prizes are awesome, including a Vitamix- I have been lusting after one for soooooo long)! The above pic is my photo entry for the contest.
I tend to keep my smoothies pretty simple, but I do love trying out new ones too. Some staples in my smoothies:
- Vega One Powders- Vanilla Chai is my fave, I think.
- Frozen banana
- Other fresh or frozen fruits
- Superfood mix-ins, such as chia seeds, maca or lucuma powder, etc... a little can really boost the nutrients you're getting!
- Almond milk &/or water for the base

**Updates:
- I recently tried using frozen watermelon (another great recommendation from Kathy- the smoothie queen!) in my smoothies and it seriously rocks my world. My NEW fave is: frozen watermelon+coconut water+ Vega One vanilla powder (and sometimes some frozen banana too). It's incredibly delicious and so refreshing.
- I can't wait for Kathy's smoothie book: 365 Vegan Smoothies. Every smoothie of hers I've had I've loved- they are always innovative (frozen canteloupe? Yup!), delicious, and easy.
- I was nominated as a finalist for the above contest! So excited! EEK! (I would love your vote if you have a sec- trust me, I have a really, really, really good reason for needing a Vitamix- more to come on that later!!)

Orange Spice Chia Oatmeal
I am on some kind of crazy orange kick here. I've been craving orange like you wouldn't believe and putting it in just about everything- my water (a great refreshing way to start the day!), my farro & kale salad for dinner last night, cookies I made this weekend, and now my oatmeal too.

Smoothie & Juice "Cleanse"
Last week I tried out a 2-day mostly smoothie "cleanse." Things have gotten hectic and a little stressed, so I thought it would be a good time to reset and mix things up- literally ;-)
I did 2 days- rather than 3, or 7, or longer- because I'm a pretty active person and I didn't want to feel drained, and I didn't want to put a lot of time into planning. I also didn't want to pay a lot for a juice cleanse through a company. I just wanted to refresh, reboot, and refocus. I've been curious about juicing/cleansing for a while, and when I get curious about something, sooner or later, I just have to try it for myself. So when my hubby was away for work last week, I figured, what better time? While everyone else was posting about Valentine's chocolates and decadent desserts, I was doing this...

Brownies, Brownies, and Strawberry Brownies!
Sometimes you just want a brownie. For my husband, that sometimes is pretty much always. Brownie sundaes and strawberry shortcake are probably his top two all-time favorite desserts. I decided to combine the two, since our neighbor had just brought us 3 baskets of fresh local strawberries. Think chocolate-covered strawberries, in brownie form. They're even low fat, too- but every bit as satisfying.

Persimmon Pumpkin Cookies

Tropical Take-Me-Aways
Ok, last "tropical" post, and then I swear, I'll jump on the pumpkin and butternut squash boat with the rest of the bloggers. (Although, to my credit, September and October are often summer-like months in the Bay area). Summer or Fall, these little desserts are good way to start off the weekend. Think Pina Coloda in a cake. Layers of soft sponge cake, rum pudding (yes, that's what I said), and toasted coconut. It's a dessert mixed with a healthy dose of the islands.

These mini cinnabuns turned fruit & cream cheese rolls use half whole wheat flour, and the dough doesn't require rising time, so they are a snap to throw together on a busy weekend morning!

Kamut-Apricot Bars
Have you tried Kamut? It's one of those "ancient grains" - a type of wheat called khorasan wheat, and has more fiber, protein, and vitamins that your average "modern day" wheat. I've had pasta made with Kamut before (which I also recommend trying- it makes for a nice- and healthy- change), but hadn't tried other Kamut products. When I saw a bag of Kamut puffs at my grocery store, I knew I had to try them. And it got me inspired to try a new variation of my snack balls & bars.

Parfait! -and non-dairy yogurt info
Yogurt, fruit, and granola makes for a delicious snack or breakfast. I used to eat at least a yogurt a day before going vegan. Since January, I've pretty much stayed away from the non-dairy yogurts, as my initial impressions of them were not so great. Grainy, odd-tasting soy yogurts were what I'd experienced. But, there are a lot of new products that are actually really good (it may just take some trial & error to find the one(s) you like). Read on for my explorations in the non-dairy yogurt world.

Lima Bean & Cantaloupe Salad
This recipe brought to you by: the colors green and orange!
It started with a bag of lima beans, a can of mandarin oranges in my cupboard, a bottle of orange champagne vinegar from Trader Joe's, and some hot weather.
Usually the only recipe I use lima beans in is succotash. So I thought I'd make use of that bag of lima beans in my freezer in a new way...

AM Green Machine!
I have been having my pumped-up oatmeal consistently for breakfast for a whiiiiillllllleeeeee... but as the weather's getting warmer, I've decided to mix it up a bit. Literally.

Birthday Cake!

Roasted Sweet Apples and Brussels Sprouts
This dish was 100% inspired by the above ingredients. I saw this giant bushel of these beautiful and cute little lady apples, right next to this big box of fresh, perfectly green Brussels sprouts at the grocery store, and that was it. I got both ingredients and decided they needed to be eaten together.

Strawberry Fresca
The thing about living in the Bay area is, when it's cold in most of the rest of the country, it's (relatively speaking) warm here. And, when my East coast friends are talking about hot sticky weather in August, it's still the same temperature it was here that it was when they were talking about how cold they were. But when my other-coasters are rejoicing about the first signs of Spring and the amazingness of those first gorgeous warm days after a long winter, I get jealous. Especially when it's been raining for what seems like weeks on end here.
Enter this lovely refreshing drink, and we can all pretend it's the first day of Spring! No matter what the weather looks like outside...

Vitamin C Pie!
I never get sick. At least, I say I never get sick. This week, after coming back from a long weekend away with too little sleep, I felt it coming on. I downed one of those vitamin C smoothie drinks, along with some Cold-Eeze pills, but it was useless. Hellloooo cold/flu from hell. The last time I was sick (about 3 years ago), I remember my sister giving me kiwis, because they contain more vitamin C than an orange. And then I thought of this fruit-filled raw pie, and how refreshing it would be to soothe my sore throat, and I was on my way to kiwi pie heaven...

Vegan Cremecakes
My husband hates it when vegan foods use words like "cheese" or "steaks" - and, I guess I understand. Don't promise something that you aren't... so, I'm calling these mini vegan "cheesecakes" creme cakes! That, and cashew-or-tofu-based cakes just doesn't have such a good ring to it ;-) I included these in my Vegan Valentine's Dinner Party menu post, sans recipe.... so it's about time for the recipe, right?!
