Tuesday with Dorie

When I made Dorie's Honey-Spiced Madeleines a few years ago I was certain that I would make madeleines often after that because I was pleasantly surprised at how easy they were to make, but for some reason I never got around to making them again until they appeared on this week's Tuesday with Dorie/Baking with Julia schedule. This recipe was so different from Dorie's because you use a ladyfinger génoise batter which gives them a sponge cake taste and texture.
When I made the French Strawberry Cake with the group last year it was the first time I had made génoise and I didn't have a lot of success with it, so this time I decided to use a hand mixer to whip my eggs and egg yolks so I could feel when it was at the right consistency and I can say that it made so much difference. I am going to make that cake again now that I have had success with these madeleines. The only thing I did differently from the madeleine recipe was I let the batter rest for about ten minutes before giving it a gentle stir and spooning it into the madeleine molds. Mine baked in 10 minutes.
My family gobbled these up, but I have to say I was less enamored with them because I prefer more of a buttery, tender crumb texture in a madeleine. Of the two recipes that I have made so far, I prefer Dorie's recipe over this one. I am glad that I made these, however, and now I won't be so intimidated when a recipe calls for génoise batter.

Elaine, very pretty looking madeleines and so nice to read that your family really enjoyed them. And you are right, it was nice making a génoise agian and it reminded me to bake that wonderful strawberry cake again. So many recipes, so little time. And you are also right, Dorie´s version is more buttery and dense, my kids loved both versions, but they love all madeleines.

Perfectly beautiful madeleines, Elaine!! How nice that your family enjoyed and gobbled them up! I love when that happens!! I served mine along with the financiers we made last week, at my granddaughters party….they disappeared so quickly and were enjoyed by all. I also prefer Dories recipe to this one.

ReplyDeleteI totally agree, they taste more like ladyfingers than madeleines, so it's not too bad, it'll be a good base for dessert!!!
I am going to have to look for a Madeleine pan. They are so cute!

So glad you conquered the genoise batter...how far we've come on this journey with Dorie!!! Your madeleines look perfect...but I think most of use preferred the FFwD version.

We enjoyed these, too, but I have to admit that I'm a fan of Dorie's version over this recipe. What I'm really pleased about is that the genoise went so much better than it did for the strawberry cake. I might follow your lead and try the cake again, once local strawberries are in season.

Elaine - these look wonderfully light and deliicous! Funny, I actually like MS's lemon madeleines the best. These were good but something seemed amiss! Glad you conquered genoise!!!

ReplyDeleteThat's funny - I thought I would be making madeleines all the time too, but haven't since we made the FFWD ones! These look delicious, but I think I would prefer a more buttery crumb too.
