Luncheon Meat and Rice For Kids

Last Saturday afternoon, I am so lazy to think what to cook for lunch. After all, my brain is not functioning and I got such a bad headache maybe because lack of sleep. I was telling Dearie Suki, lets have canned food for lunch. I know this is not a good choice for the kids meal but once in a while I think it should be alright.

Opened up a can of Luncheon Meat and cut into thin pieces and fried till golden brown. To make the kids lunch much more interesting, I cut the fried luncheon meat with a tulip and bear cookier cutter. Arranged it on top of their rice and sprinkle some Chicken Furikakae Seasoning on top of it.

This is Le-Ann's lunch set. Arranged the tulip cut out as eyes and mouth and the bear as nose. Also have some seedless grapes and a honey mandarin orange for their dessert. I ask little girl, what it this? And she answered me 'FACE' lor mommy.

For little Ee-Thern, used the tulip cut out as face and the tulip as ears. Some seedless grapes and a honey mandarin orange for him. When I asked Ee-Thern, what is this? He answered me, mommy 'MICKEY MOUSE'. Is this looks like MICKEY MOUSE? It looks more like a REINDEER to me. Anyway this is his imagination.

Both of them 'sapu habis' the rice and the luncheon meat. After having their lunch, I am too tired and took a afternoon nap with both of them for about 3 hours.

Grilled Teriyaki Pork Ribs

Its been so long I didn't blog about food that I cooked at home. I was clearing my folder and found there are so many photos pilling up.Ooops better clear off before I forget again. So here is another one of my delayed post. I bought a rack of 'pai kuat' ( pork ribs ) from the non-halal section in Giant, Bandar Kinrara.

Dearie Suki wanted grilled 'pai kuat' instead to use it for boil soup. Sayang leh, if I use it for soup. I always like to marinate meat with Kikkoman products. So .... marinated the pork ribs with Kikkoman Teriyaki Thick Sauce, Kikkoman Honey & Soy Sauce, about 1 tsp of Tabasco Chipotle Pepper Sauce, and a dash of dark soya sauce. Marinate overnight.

The next day after I came back from work, grilled it in the oven about 40 minutes under low heat. Half way grilling baste the ribs with the juices and let it grill in the oven till cook.

Here a lovely plate of Grilled Teriyaki Pork Ribs

3 of us me, Dearie Suki and little girl finished up all the 'pai kuat' and its like finger lickin' good for the small girl.

Kids, Lets Have Breakfast

Dearie Suki always wanted me to prepare breakfast for the kids at home but for me, I still prefer to eat with the kids at the Kopitiam and enjoy my cup of 'Kopi O'. You know why Dearie Suki want to eat at home ? .... So that he don't need to wake up so early and send us out to the Kopitiam.

Last Saturday makes some French Toast for the kids and fried some ham and bacon too for their breakfast. Dearie Suki loves french toast and me as well. It is easy to prepare too, you will need eggs, some milk, sugar, salt and pepper to taste. Coat the bread with egg mixture and pan fried in a non-stick pan with some oil till golden brown. Easy right ?

Yummy, french toast for the whole family.

This breakfast for the Big Baby at home who are still sleeping soundly in bed, Zzzzz. He woke up at 12 pm to have his breakfast! Did you realize the bread got one hole in the middle. It is actually a gingerbread man, I cut out with a cookie cutter for the kids. Balance of the unused egg mixture I pour into the whole and fried it under slow fire till the egg set.

This are for the kids. Cut the french toast with a gingerbread man cookie cutter. Some rolled ham and secure it with cute animal toothpicks and each of them have a bottle of Yakult.

Both Le-Ann and Ee-Thern before they have their breakfast they finished up their Yakult. So fast ah and I don't even know they have finished it until I came out from the kitchen. Little girl is a real meat eater, only attack the ham and pass the french toast to his brother.

Little boy, also another meat eater and he loves the ham so much. I think I got to quit my habit of going out to the Kopitiam for breakfast and have to prepare more breakfast for the kids and Dearie Suki during weekend looking at the way three of them enjoy the breakfast I prepare for them.

Bak Kut Teh

Yesterday we had Bak Kut Teh, one of my Dearie Suki favourite. Nowadays without the maid, I have opted for a more simpler cooking and most of all preferably those can cook all in a pot. Reen Reen, dropped by my office few weeks back and gave me some product samples she get from her ex-company.

The XIFU brand, Bak Kut Teh Soup Seasoning comes with 2 soup bags in a packet but I only used 1 pack yesterday night. Besides from Bak Kut Teh, they also have other SKUs which is the Emperor Chicken Seasoning Mix, and I have yet to try it out. Will try it out some other day.

1 packet of Bak Kut Teh seasoning bag and approximately 1.5 litres of water, I slow boiled it in a slow cooker for about 4 hours. Added in some pork ribs, a piece of pork belly, 1 whole garlic with skin, some taufoo pok and lastly Enoki mushroom into the Bak Kut Teh. I've also added in few tablespoon of Kikkoman Soya Sauce and about 1 tbsp of oyster sauce to taste.

I was having lunch with my colleagues at the Subang wet market and passed by Asia Cafe and coincidentally saw a stall selling Yaw Char Kwai ( Fried Curlers ), and quickly get AN to stop by and I go down to buy the Yaw Char Kwai.

I think the Bak Kut Teh is not too bad and almost similar to the stall selling outside but my Dearie Suki was complaining not kick enough. Off course leh my Dear, those selling outside added in so much MSG what do you expect !

Dong Poh Pork

While I was cleaning my bookshelf during the weekend, I came across my old recipe book and flip through and found the recipe for Dong Poh Pork. Whenever me and Dearie Suki dine at Esquire Kitchen, we will never miss the Dong Poh Pork and their steamed Flower Rolls to eat with it.

I still have a big piece of prok belly in the freezer and wanted to clear if off before I forgot about it again. Cook this last week and make some amendment to the recipe and the result is not too bad but with all the fat meat, errrr... I think for the next 1 month I am not going to touch any pork.

Bought a packet of frozen flower rolls, steamed it over high heat and I only ate the hot flower rolls dip with the Dong Poh Pork. I only had 2 pieces of the fatty pork and Dearie Suki was looking at me and ask me ... " How can you eat the fats on the pork " and I answered " Nevermind la, once in a while " but after that I think I am not going to buy any pork for a moment. It is just too fat.

So here is the recipe.

Ingredients :
500gm pork belly, with skin intact
Some hemp-string to tie the pork
6 pcs cloves
1 tbsp dark soya sauce
2 tbsp light soya sauce
Salt and sugar to taste
1 cup of water

Marinade :
1 tbsp light soya sauce
1 tsp dark soya sauce
1 tbsp oyster sauce
2 tbsp sugar
Some salt and pepper
6 whole garlic pods

Method :
1. Cut the pork in to square, about 6 cm X 3 cm and tie it with a hemp-string.
2. Marinade the pork with the marination ingredients, preferably overnight.
3. Heat a heavy based saucepan and add in the pork. Then add in the rest of the ingredients.
4. Pour in the water and let it simmer for about 1 hour. If the gravy is too thick add in more water to it. Season with salt and sugar to taste. Let it simmer till the meat is tender and dish up.
5. Serve with hot steamed flower rolls.

Simple Meals #6

For 3 weeks I haven't been blogging about my simple meals. Now got bento and forgot about it. While I was arranging my folder, saw those food pictures pilling up. Ever since I come back from my holiday, I have been getting lazy to cook nice dish for my Dearie Suki. Nothing new so far and I have been cooking a lot of fried rice and stir-fried green vegetables for dinner cos its easy and no need to think so much.

For a change in menu, I uses Petai to fried with rice. I am just getting bored with Petai. See also 'jelak'.

My dad advised me to blanched the mushroom with hot water before we kept it in the fridge cos according to him all fresh mushroom contains live fungus and it might be poisonous. So to play safe, better blanched with hot water before you store in the fridge.

This is one of my favourite confinement dish. I remember my confinement lady cook this dish for me not using rice wine but only using the hard liquor and Dom. Wah, so syiok! If my mom and sis see this dish I doubt they will be *drooling* for it. Cos we 3 women love this a lot, a lot, a lot.

This is my Dearie Suki favourite. He miss his Fried Siew Yoke at one of the hawker stall in Petaling Street. Nevermind la, my version also the same!

The 3 Musketers Birthday

Woke up at 6.15 am today and went to the wet market to get the fishballs and seafoods for today Steamboat Party at Ah Mah's house. Both Le-Ann and Ee-Thern woke up early today and after playing for about 2 hours outside the garden, I get both of them to take bath as we are going back early to Kajang today.

Both of them got excited and they will know that I am bringing them to ' Tai Ma' house today. After taking bath, they get ready to go while waiting for my maid to load all the food into my car.

My little girl showing off her new mini 'LeSportSac' bag bought by Daddy.

Dad and Mom was early too. This is what I get at the wet market today. 2/3 of it are from me and another 1/3 from Mom. Emmm.. Mom bought a lot of my and my sis favourites steamboat items.... pork liver and pork kidney and 'si hum' @ cockles.

Dad's 'Wantan' is 1st Class. He make one whole big bowl of minced pork to make wantan filling. My little KPC helping 'Popo' to wrap the wantan and look at her wantan is so UGLY and 'Popo' half way wrapping, half way nagging her cos she keep playing with the wantan skin.

Look at these 2 big babies ( my cousin ) and my ah girl, attack the cupcakes before the party start.

My uncle make this Vietnamese Style 'Si Hum' Salad. So,so, so nice. If Dearie Suki see this he is going to nag me again eating so much of this cos he hate 'Si Hum'. I hate it everytime I share 'Char Kuey Teow' with him he will get the 'Char Kuey Teow' Uncle not to put 'Si Hum'. Aiyar... nice food also don't know how to enjoy. I remember when I was young, me and sis will buy 'Si Hum' and blanched it a while with hot boiling water and then 'kopek' the 'si hum' and dip it with chilli sauce. Aiyor ...so nice.

The steamboat party started at 2 pm and while taking pictures guess whose fingers is that ! Kacau me.

These 3 boys .... Do, Re, Mi.... 3 yrs old An-Son ( in orange shirt ), 2 yrs old my Ah Boy and 1 year old Ea-Son ( in red shirt ) playing in Ei-Faye's room and make a total mess in her room.

Blow cake session. A surprise for the 3 Musketers on the cake I bake for them. Although a bit ugly but they are happy with it. Ugly but adorable mah.

My KPC Ee-Thern stand in the middle as though is his birthday. My Le-Ann miss the cutting cake session cos she is asleep. Anyway the 3 kids are happy with their birthday cakes and they told me the cakes is yummy too.

Clockwise from top let: The half gone cakes, 2 birthday girls with Dad enjoying their slice of cake, even Ea-Son also got his share of cake, Ea-Son with mommy.

What is this ? Dearie Suki came late to Ah Mah's house with a whole big box of roasted pig head and tail. He sponsored a whole roast pig for a temple today. I think they have a prayers at the temple. This is what he brought back. The 'Sifu' also gave him 2 angkus, 2 huat kueh, 1 apple, 1 orange and 2 red eggs. Luckily he is smart to bring it to Ah Mah's house if not how am I going to finish it. Thank god, Mom help me to allocate out the roast pork to my Aunts. Looks like we are going to have more 'Assam Chai' already.

Reach home and get my maid to clean the roast pork and you know what she did ? Already tell her to chop into 3 big pieces and she go and cut into small tiny pieces. Aiyar ... makes my flame burning. Thank god she is going back next month if not I will get HEART ATTACK !

Dark Soya Pork with Eggs

My Ah Ma used to cook 'Dark Soya Pork with Eggs' at home when we are kids. In Hokkien they called it ' Tau Eeu Bak with Lor Neng'. This is one of my favourite since young and with just one dish, I can eat a whole plate of rice with the sauce. Same goes to my kids and Dearie Suki and they love it so much. I think all of us are meat eaters and it runs in the family.

My Ah Ma's 'Tau Eeu Bak' has more sauce and for me I like it dry and hence less sauce. Also cook this 2 weeks ago.

Here is the recipe to share.

Ingredients :
500gm pork belly, cut into 3 cm thick
3 cups water
10 peppercorns, crushed
10 cloves garlic, with skin and washed
4 hard boiled eggs , shelled

Seasoning :
1 1/2 tbsp dark soya sauce
2 tbsp light soya sauce
1 tsp salt
1 tbsp sugar

Method :
1. Bring 3 cups of water to boil. Add in peppercorns and all seasoning.
2. Add in pork and hard boiled eggs. Simmer for about 30 minutes before adding the garlic cloves.
3. Continue to simmer over a slow fire until meat is tender, about another 20 minutes.
4. Serve with steamed white rice or porridge.

This dish is best served the next day to allow its flavour to develop.

Assam Chai

I was cleaning my fridge 2 weeks ago and found there is a big packet of roast pork ribs in the fridge. Try to think back who gave me this and finally I remembered Mom gave it to my during Chinese New Year - Pai Ti Kong day. Alamak... so many months already and I totally forget about it. Called Mom and check with her whether still can eat or not. She started to nag me again say that one is supposed for me to cook porridge for the kids but I totaly forgot about it.

And she nag, nag and nag again ask me to cook Assam Chai with it and bring it back to Ah Mah's house to eat on Sunday. OK leh, I followed her instruction and cook Assam Chai with it and try to find whatever bones or chicken left in the fridge and throw everything into the pot.

Me, Sis and Mom loves to eat Assam Chai, very spicy and sour and that is our favourite. Head straight to the market and bought some ' Kai Choy' or green mustard to cook with it. Also added in some assam keping and dried chilli and 3 tbsp of tomato sauce. Boil everything with the roast pork ribs till the vegetables is soft. Season with some sugar and salt.

Wah really 'shiok' to eat. So sour and spicy.
