Granola Muffins


What's cute and small? Sweet and crunchy? With a little bit of sass? 
Well me when I was 5! (minus the crunch!) But also these Granola Muffins!

They are a perfect little treat that can be customized to fit any taste palate. Not to mention easy to make... so easy you can even get the children you babysit involved for a fun way to pass the time!

First things first - get you dry ingredients all stirred together (this is a perfect job for little hands)

Then... while the little one(s) are doing that, you can melt up the wet-ish side of things...

When it's warm and all thoroughly mixed together, wait about 3-4 minutes after it starts simmering... then you are ready to pour it over the dry!

You'll mix them together really well and press into muffin tins. 

Then place in a 350* oven for 20ish minutes (sides will be golden brown)

And viola! 

Also a perfect on the go treat for you!
I threw these into the car as they were just cool enough to pack up before I went out and picked up the rest of the kids from school. 
It was a perfect in the car snack! This is due to these Granola Muffin's 3 qualities:
1. Healthy (so I can feel good about feeding them to children)
2. Delicious (so the kids actually want to eat them!)
and
3. More on the chewy side of things instead of crunchy ... aka-not a HUGE mess in my backseat!

So here is the full out recipe-
Ingredients:
(wet)
-1 banana
-1/4 cup peanut butter
-1/4 cup honey
-2 TBSP. butter
-1 tsp. salt
(dry)
-1 1/2 cups oats
-1/2 cup flour
-1/2 cup cereal of choice
-1/2 cup coconut (or any nuts/cereal)
-1 tsp. baking powder
-1/4 cup nuts (or any other mix-in... choco chips, raisins, etc.)

1. Mix dry together
2. Heat wet on stove, mashing banana and mixing well.
3. Let wet simmer on stove for 3-4 minutes, then remove and let cool a minute or two
4. Add to dry and mix well
5. Press big spoonfuls into muffin tin (greased)
6. Place in 350* oven for 20 minutes, sides of muffins should be golden
7. Cool, remove and ENJOY!

Ice Cream and Cake switch identities...

What's better: A) Cake or B) Ice Cream
Hmmm... that's a toughie isn't it?! (Ok- for me, definitely ice cream!) But, I do loooove a good white cake. Just plain white. cake. Hence a problem...
Bum-de-de-dum-bum-bum-BUM!

So what's a girl to do? Make a cake that looks like ice cream- and homemade ice cream that tastes like cake batter! DUH :)


I used some half-eaten cake to make the cake balls with.... economical!

The batter was pretty good... not gonna lie!

mix up some homemade cake batter...

pour into two cake pans and viola!







I had never done a 4 layer cake before... excitement!



And yes... in case you were wondering- it tasted just as yummy as it looked!

Birthday!

Sooo it's my birthday! And not that I want/like a lot of fuss of attention ...but I do love any excuse to have cake batter flavored anything! :)

So due to that obsession - today I made birthday cake pancakes! Woot woot!

All you do is add 1 tsp of each of the following to a standard pancake recipe:
-vanilla extract
-butter extract
-almond extract

Birthday Cake Bread


What do you get when you combine the best two tokens of joy on the face of this Earth? (no.... not myself and Taylor Swift silly! The next two tokens of joy!) 
~ Sprinkles and Birthdays! 
In case you were unaware of the new formula for happiness is: 
Sprinkles + Birthdays = :D
...it's true, it's proven!


So what do you get when you combine sprinkles and birthdays, with a side swipe of bread (another joy-bringer in my life!)
You get.... (drum roll please....)

BIRTHDAY CAKE BREAD! 


Yes... you heard me right- Birthday. Cake. Bread. 

It's sweet, it's moist, it's delicious! And best of all - IT HAS SPRINKLES!


This bread will satisfy even the strongest sweet tooth-with no guilt! It's a healthy bread! ... are you guys really surprised? The Blissful Baker never tempts you with delicious looking treats that are bad for you!

You could even serve these up with whipped cream or ice cream and have them instead of cake at your next birthday party! I almost definitely like this bread more than cake anyways! It tastes just like Funfetti cake! 


So why not just make Funfetti cake? Because of a few reasons.. 
1. It's healthier
2. I like to switch things up!
3. You can toast it! Or make it into sandwiches! I mean really... what could be better than a cake-like bread, toasted and made into a sandwich!? 
Nothing! That's what!


Ingredients: 
-2/3 cup Greek yogurt (vanilla or plain)
-1 egg
-1/2 cup sugar (or any sweetener)
-1/4 cup applesauce
-1 small pkg. instant sugar-free vanilla pudding
-1/2 tsp. salt
-2 tsp. baking powder
-1 1/3 cup flour (whole wheat works fine)
-1 tsp. butter flavor extract (or vanilla if you don't have butter flavor)
-Sprinkles!

Directions:
1. Cream yogurt, egg, sugar, applesauce and pudding
3. Add salt and baking powder
4. Slowly add flour
5. Fold in sprinkles
6. Dump batter into a greased and floured loaf pan and sprinkle top with more sprinkles!
7. Bake in a 350* oven for about 1 hour, use the toothpick test!
8. Remove and let cool in pan for 15-20 minutes
9. Enjoy like a little kid on their birthday!
