Happy Asparagus!

Empty basket…

When my kids were younger
we would decorate eggs
and gather together
to make and share
a delightful meal,
most often it was a ham with
various seasonal veg and fruits.

Now days,
my kids are grown adults
they have their own paths
and I find that I scale down
every holiday.
So today,
the day after
I sit here and realize that
somethings stay the same.
I made a ham with mac-n-cheese side
with amazingly fresh asparagus.

Let Them Eat Cake...

Strawberry Lemon Cake
vanilla cake infused with freshly squeezed lemon juice, lemon cream cheese icing and fresh sliced strawberries


This WONDERFUL cake is from
Shyndigz Dessert Cafe
in Richmond, VA

The coffee is so good
with such a delightful
sweet treat

The decor is simple
and cheerful

Today is the first day they have
 opened
here in their new location


I love the fresh flowers
that are placed throughout
the cafe

This space was once a speak easy/bar

I love how the bar stools
have been repurposed
and
hand painted
so colourfully

Can you see the cake cooler?
LOTS of delightful treats
to be found in there!

This cafe has a steady stream of
dine-in and take away customers.
Yes, they are really that good!

The slices of cake are HUGE
I've gone past my usual stopping point now!


This over indulgence I blame
on the yummy coffee that
is paired with such treats


I love the sparkle light display

And the water carafe 

Oh and the simple line water glasses
and...

 the wonderful size of the coffee cups!
What's best, the fact that
the coffee is so tasty
and
 'endless'
Love this!

The paper cake rounds
made into decoration
is just another of the simple elegance
this cafe has created!

An antique door turned into
a table top seats seven...

Wooden booths that
have been distressed painted
the exposed brick walls
inside...

and outside on the patio.
This cafe really has so much to offer
the residents of Richmond!

I know that I am very satisfied with my
dessert and dinning experience!

 The friendly service
and the overall ambiance of
the cafe really makes dinning in
as delightful a treat as the dessert menu items themselves!

I highly recommend any and all
who visit Richmond
to put Shyndigz
on their list of places
to visit!

with soda bread of course!

I LOVE this meal
and seem to make it only
once a year.


Even though my eyes are green

How Did This Happen?

I've been craving enchiladas
so I thought I'd attempt to make
some again,
It's always AN ATTEMPT
for me.


I followed the recipe interactions perfectly

But somehow, my individual enchiladas became a casserole

Oats and Peppers



I've been craving peppers
for a few days
So I decided
 to make stuffed bell peppers




It's a simple meal



A few fresh
peppers, garlic, tomato,
beef and rice



Browning the meat and garlic
while the water
 begins to boil for the peppers



Combine cooked rice,
tomato, add water, tomato paste,
salt, pepper, oregano, and Worcestershire sauce
let stew for 15 to 20 minutes covered over
med/low heat

Flash boil peppers
between 3 to 5 minutes
time determined by size
 and thickness of peppers
thin less, thick more


Once peppers are done
set in baking dish
add 1/4 cup water
and wait for filling to finish slow stew
(approximately 10-15 minutes)
Then fill with tomato/meat sauce
top with choice of cheese
(I used mozzarella)
bake at 350
for 35-50 minutes
(size of peppers determines this
large longer, thin shorter)

I like crispy tops


Serve

Enjoy


For dessert
gooey oatmeal raisin cookies
I just used the recipe on the back
of lid from Oats container
simple and delicious 




350 oven
8-10 minutes




Let cool

Recipe makes about two and a half
dozen cookies




I made seven
chocolate chip
raisin oatmeal
cookies for myself
YUM!
