This recipe is out of this world to die for! Just one bite and you are hooked on it. Trust me I had to come up with some amazing will power to put the spoon down and not eat the entire thing myself. I really enjoyed it fresh from the stove but the next day is was pretty tasty as well. Either way I don't think you can go wrong with this recipe. Next time I am going to use raisins in place of apples. Truly I think just about any fruit would work well with this recipe.
Ingredients:
2 cups cooked rice
3 cups milk
1/2 cup sugar
2 cups peeled, cored and diced apples (about 2 - 3 medium apples)
1 tsp vanilla
1 tsp cinnamon (more or less to your taste preference)
Directions:
Combine rice, milk, sugar and apples in a large pot. Cook over medium high heat until mixture starts to bubbling. Reduce heat and simmer for about 20 - 30 minutes, stirring occasionally. Once mixture has thickened, remove from heat and stir in vanilla and cinnamon.
