Stuffed Miniature Potatoes

Can't say enough about these adorable little buggers. Creamy on the inside and crispy on the outside. Bite sized and incredibly delicious. Serve with steak as a side dish or can also be an easy to prepare appetizer. Maybe try a bacon version next time.




Boil Yukon Gold potatoes. However many you like. Boil until fork tender. Cut in half. Scoop out one side to stuff. Collect insides in a bowl with cut off tops. Add a tablespoon or so of cream cheese and fresh garlic (butter is optional but recommended). Mash. Mix in green onion and cheddar, salt and pepper to taste. Fill potatoes. Top with more cheese. Bake at 350 for 20-30 minutes or until desired crispiness.

Stuffed Chicken

Ham and swiss rolled into chicken with whole grain mustard.



Wash and pound chicken until thickness is somewhat even throughout the breast. Spread whole grain mustard on one whole side of chicken breast. You want to barely taste the mustard so make sure it's quite thin. Layer a piece of salty ham. Layer swiss cheese thick enough to lose some throughout the cooking process. Roll tightly. Secure with toothpicks. Top with salt and pepper. Bake at 375 for 20-30 minutes.

I served it with garlic mashed potatoes and fresh steamed green beans.

Mozza Stuffed Meatballs

I took the idea from blogger Homemade but her recipe is from Racehel Ray...I'm worried that if I see the word EVOO I'll stab myself in the eye with my shiny Cuisinart knife. So I made up my own recipe. Good but no signature. I prefer spaghetti with Chorizo.




Ground Beef
Ground Pork
Mozza cubed
Freshly grated parmesan
Panko Crumbs
Chopped onion
Diced garlic
Egg

I shaped the meat mixture around the cheese cube. I seared them in a hot pan. Then I put them in the sauce and simmered for about 30 minutes.

Stuffed Meatloaf

I think I made this recipe up. He said it was delicious. And I enjoyed it also. It was really easy to make and handy for lunches the next day. He says I'm too good for it. A signature, but maybe not THE signature. He looked at me like this too when he said it. It was super intense.













Meat Mixture (top and bottom):
lean beef
pork
onion
garlic
tomatoe paste
smashed crackers
egg

Filling:
sliced mushrooms
seasoning salt
pepper
havarti (Or other white cheese)

Topping:
ketchup
mustard
honey
hot sauce

Preheat oven 350.

Saute mushrooms with spices.

Mix meat with garlic, onion, paste, and crackers until just mixed. The less you handle meat the better.
Place half meat mixture in bottom of loaf pan. Create a bit of well. Layer of havarti, Layer of sauteed mushroom. Layer of havarti. Layer of beef mixture.

Top with salt and pepper. Place on lower rack for 25 minutes. Spread topping. Bake for another 10-15 or until meat is cooked.
