S'more Bars

I have always LOVED to cook and eat s'mores, so when I came across this recipe years ago, just after I got married, I thought I'd try it. I'm so glad I did! My little family and I love this yummy treat (as does everyone else that eats these). One of the best things about it is that it is so simple to make, just like the original s'mores.

Here's what you'll need:

1/2 C. margarine or butter
1/2 C. packed brown sugar
1 C. flour
1/2 C. graham cracker crumbs (about 1/2 a package graham crackers)
2 C. mini marshmallows (or as many as you'd like)
1/2 (12 oz.) pkg. chocolate chips

Beat margarine or butter and sugar until light and fluffy. Add combined flour and crumbs; mix well.
Press onto bottom of greased 9 inch square baking pan.
Sprinkle with marshmallows and chocolate chips.
Bake at 375 degrees for 10-12 minutes or until marshmallows are golden brown.

Just a note: I made these for one of my good friends just after she had a baby. I decided to double the recipe to have some for my family as well. As we were hurrying out the door, so that we wouldn't be late, I was holding my baby in one arm and these treats (shown here) with the other hand. A bit of advice, don't do that! I ended up losing balance between treats and baby and the entire pan came crashing to the floor. There was chocolate and gooey marshmallow and shards of glass EVERYWHERE!! I was so mad that these so yummy treats were a total waste. Good thing I made two so at least my friend was still able to get some!

YUM! I love S'Mores! Thanks for sharing this delicious recipe. It will be a fun one for summer family BBQ's! Not a total loss with the 2nd pan, at least you got a photo! I just found this recipe on Pinterest. I made them and literally pulled them out of the oven as we were walking out the door to a Christmas party. I was a little nervous about taking something I'd never made before, but these were so, so scrumptious! They were a total hit.

Hello! I found these bars on Pinterest and I JUST tried them tonight. I was so excited about them because smores are one of mine, my kids and my husbands FAVORITE things! BUT, when we tried it, we were all really disappointed. It tasted like flour.... And Actually NON of it really tasted like a smore... I followed your recipe step by step. But why do you add flour to your crust anyways? A traditional grahmcraker crust there is no flower added. Just curious. Ciera, I'm so sorry to hear you didn't like these! But, you're right, it doesn't have a traditional graham cracker crust. If you'd like more of a graham taste, try more graham crackers and less flour. If you do, let me know if you like it any better. Good luck!

Danielle, I would really hesitate making this ahead of time and freezing them. My biggest concern would be freezing the marshmallows. I've never tried that, so I'm not sure how they'd turn out thawed. If you want, you can try a pan out early to see how they turn out. Good luck with the big day!!

I made these for the first time last week and my husband and I LOVE them!! Making them again tonight, but adding a layer of peanut butter between the marshmellows and the crust, then we plan to top with ice cream when it comes out of the oven! Thank you for sharing!!!

Do you serve these hot or can you make them ahead and serve them cool at party? Also after you take them out of oven do u let them cool and then cut?

Tracey, I've served them both ways, but usually when I take them to parties, I take them cooled. If you use a plastic knife, the marshmallow doesn't stick to the knife when you cut it (when it's cool).

I found this last night and made this morning for the very deserving EMTs in my town. I broiled the top to get the marshmallows golden brown for about 30 seconds. I had to make a second pan so I could try it too! I'll let you know the reaction I get!

How finely crumbed do the graham crackers have to be? Just crush them up by hand?

I just smash mine up with a rolling pin. They don't have to be super fine. Some chunks are okay.

do you have to use brown sugar or can you use just plain white sugar?

You should be able to use regular white sugar, but it will change the taste a bit.

If you have molasses on hand, you can combine 1 cup of white granulated sugar with 1 1/2 Tablespoons of molasses to make your own brown sugar.

Meg, graham crackers are lightly sweet cracker. I found a recipe to make them from a website and store that I have purchased MANY things from and tried LOTS of their recipes. Though I have not tried this recipe, other recipes that I have are very well liked, so I would trust this one. Good luck!

How early can u make this ahead of using it? How do you rewarm from the firdge?

If I were to make this ahead of time, I would only make the crust and keep that part covered in the fridge. Then when you're ready, throw on the marshmallows and chocolate chips and bake it in the oven. I prefer this treat warm and gooey. If you happen to have leftovers, I would just keep it covered on the counter, not in the fridge. Hope that helps!
