A couple weeks ago, one of my co-workers put a decoration in our Catholic School hallway with a ghost stating, “Ain’t No Ghost, but the Holy Ghost”.
I was getting ready to make Halloween cookies and I knew that this was most definitely the direction I wanted to go!
Dark Chocolate Mocha Sugar Cookies

Cookies
½ cup butter, softened
2 tablespoons shortening
¾ cup granulated sugar
1 egg
½ teaspoon vanilla
1 teaspoon Instant coffee powder
½ teaspoon salt
3/8 teaspoon baking powder
1/3 cup unsweetened cocoa (dark chocolate, if possible)
1 ¾ cups all purpose flour

Edible Food Marker
Place the butter, shortening and sugar in a stand mixer fitted with the paddle attachment. Beat until light and fluffy.
Add the egg, vanilla, baking powder, salt, and coffee powder and mix until well combined.
Add the cocoa, stirring until completely incorporated.
Finally, add the flour, ½ cup at a time, mixing until completely combined.
Preheat the oven to 375 degrees F and line baking sheets with parchment of silicone mats.
Roll the dough out on a heavily floured mat. Cut out cookie shapes and bake for 10-12 minutes. Cool on wire racks.
Frost cookies with royal icing and decorate with an edible food marker.
