It’s Secret Recipe Club time
again! This month, I was assigned
Rebekah’s blog, Family, Food, and Fun!
Rebekah is a home-schooling
Mama of 5! She also has a passion for
cake decorating.
I absolutely love Rebekah’s
food philosophy which is, 1. If your grandparents (or great grandparents)
couldn’t have eaten it in the 1920’s, you don’t need it either. And 2., if a 3rd
grader can’t pronounce something in the ingredient list, it isn’t something you
should be eating!
Rebekah has so many delicious
(and healthy) meals on her blog, but being December, I was drawn toward
cookies!
I’ve been wanting to make
Melted Snowman Cookies for quite some time, and this seemed like the perfect
opportunity. Though it is a bit ironic
making melted snowmen when we’ve been enduring a January-like cold snap (the
temperature hasn’t been above 0 in over a week!) We’re not making snowmen at all (windchills
are around -35….brrrr), much less watching them melt!
But I digress…
Since it’s too cold to go out
and build our own snowmen, the logical course of action is to make cookie
snowmen!
This isn’t so much of a recipe
as a method, which lots of room for customization. In the cookies you see above, I used my
favorite gingerbread recipe (though any cut out cookies will do) and cut them
out with a 4-inch round cookie cutter (though many choose to make free form cookies
for these).
You can make a whole batch of
these guys or just a few (I just made a few using leftover icing from my Ugly Sweater Gingerbread Men)
Overall, these were super fun
little cookies to make and I loved giving them all alarmed little faces!

Melted Snowman Cookies
Adapted from Family, Food, and Fun
Cut out cookies, cut in
4-inch circles
Royal Icing, thinned to 15-20
second consistency
Large Marshmallows
Line a plate with parchment
paper (spray with non stick spray, if desired).
Place marshmallows on the plate and microwave for 10-15 seconds, or
until they swell. Remove from the
microwave, press down lightly on each marshmallow and cool slightly.
Meanwhile, pipe royal icing
onto a cookie (note: 15-20 second icing means that a blob of icing drizzled
back into the bowl will take 15-20 seconds to smooth back down into the
icing). While the icing is still wet,
place a marshmallow on top of the cookie (beware, if you’ve used non stick
spray, the marshmallows may slide off the cookies). Let the cookies dry for at least 30 minutes.
