Pawpaws are all in the same genus, Asimina, but there are different 
species, and, I presume, different strains or races within a particular 
species.  The KYSU pawpaw site(www.pawpaw.kysu.edu) is probably the best 
website for pawpaw info.  Dirr discusses the Asimina species to some extent 
in his 'Manual of Woody Landscape Plants'.

I've got an A.parviflora(dwarf pawpaw) selection from Alabama grafted onto 
A.triloba rootstock here, and it has (so far) survived 2 or 3 Kentucky winters.

I've had decent success doing simple whip graft with dormant scions just 
after the rootstock begins pushing leaves.
