Thomas, those "white specks" are root tips.  Let the roots erupt to perhaps 1/8 to 1/4", then plant, root down, in starter mix.  Cover only about 1/4".  Indiv. pots will be useful;  deep pot best.  Expect mildew infection when sdlgs are 2 or 3" tall -- it will stop all growth unless you control.
