Typographical fixes in the Markdown files.


Commit message

English typography typically uses dashes: either spaced en dash (an en
dash surrounded by spaces) or an unspaced em dash are used.

Use a spaced en dash in all instances in git-guides, where hyphen is
currently used between words in prose, but a dash is more appropriate.
