Buttermilk Spice Cake Covered With Rum Caramel Sauce/Walk with Zoulah and Beaulah

Zoulah extends a Warm Witchy Welcome to her Bewitchen Kitchen and to Red Couch Recipes today.

We are glad you have stopped by for a visit.  This is the dessert that Zoulah served Beaulah when they got together last week for a luncheon and a walk.  Zoulah loves a spice cake in the fall; one that has buttermilk in it is even better, but what she really LOVES is the rum caramel sauce.  Several times I caught her dipping her warty finger into the sauce!  It was the day that both of them acquired LEGS!  After the recipe and instructions for this cake, I will highlight some pictures of their WITCHY WALK in my backyard.  They loved exploring and spending time together.

Buttermilk Spice Cake Covered With Rum Caramel Sauce

Zoulah says be careful with the caramel -- it is addictive.  The cake itself is sweet also, so be somewhat sparing with the caramel (unlike the above picture).

Cake Ingredients and Directions:

2 1/2 cups sifted cake flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 cup butter, soft
1/2 cup light brown sugar, firmly packed
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract

Sift together the flour, baking powder, soda, salt, cinnamon, ginger, cloves, and nutmeg. Cream butter in a mixing bowl; add brown sugar, granulated sugar, eggs, and vanilla extract. Beat at high speed of an electric mixer for 5 minutes, or until light and fluffy. Scrape bowl often. Add sifted dry ingredients, alternating with buttermilk, mixing at lowest speed just until smooth.

Pour batter into two greased and floured 8-inch round layer cake pans. . Bake at 350° 30 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Cool in pans on rack for 5 minutes, turn out of pans onto racks to cool completely.

Zoulah's Notes:  She used 3.5 ounce ramekins and baked them for 20-25 minutes.  She put less than 1/2 cup of batter in each ramekin.  IYield:  about 12 ramekins.

Rum Caramel Sauce Ingredients and Directions:

1/2 cup heavy whipping cream
1/2 cup butter
1/2 cup dark brown sugar
1/2 cup sugar
1 teaspoon rum extract

Combine all sauce ingredients in heavy saucepan. Bring to a boil over medium heat, whisking occasionally. Cover and continue to boil for 1 minute. Uncover and boil for 3 to 4 minutes without stirring. Cool slightly before drizzling over warm cake. By cooling slightly, the sauce thickens a bit.  So if you want a thicker caramel, cool longer.  Serve cake warm.

Zoulah and Beaulah's Witchy Walk
The first thing you might notice is that Zoulah and Beaulah both have LEGS!  Since legs are new to them, they decided to take a walk in my back yard.

There they are taking in the early fall beauty.  Some flowers are still blooming.

"Oh no!  What issst that?   It must be a caaaat!, cried Zoulah.   "Drat," said Beaulah, " I hope he doesn't knock us off our pedestals!"  But no, Wolfie is a very fine, but curious cat.  Of course he had to check out two witches taking a walk in HIS back yard!

The girls showing off their fancy backsides.

The girls love to chat with one another.  They enjoy each other's company.  They stopped to chat on the flagstone in the backyard.

Beaulah stopped to pick a rose and gave it to Zoulah to thank her for such a fun luncheon, walk and day.

Zoulah and Beaulah both thank you for stopping by Red Couch Recipes.

Zoulah's Pet Spider Table

Zoulah gives you a warm witchy welcome to her Spider Tablescape!

She and her pet spider LEGGS got together and put this table together.  We are in luck because LEGGS her pet spider is usually rather reclusive and hard to photograph.

Purple is one of Zoulah's favorite colors -- she just loves the purple and black combination.

The spiderweb "shawl" was found at Michael's this year.  When Zoulah returned to buy another, they were all gone.  Zoulah cried her witchie tears!

Zoulah clicked her witchie shoes together with delight when she found these felt spider webs at the Dollar Store. Like most witches, Zoulah loves a bargain.

Zoulah loves drinking potions out of these "spidey glasses."

A couple friends of Leggs who are more friendly and more photogenic joined us at the table.

Zoulah had to put her touch on the table with her With's Brew "Feetie" Bowl -- there is a spider and web on the side.

How about some little spider breads for dinner?

The Spider Bread on the table.

For dessert, take your pick!  Zoulah has been such a busy witch in her "Bewitchen Kitchen" cooking up some magical treats.

Halloween Plaques

On Friday evening, the youngest Red Coucher insisted on doing a craft RIGHT NOW!  Zoulah, being the kind, patient, and loving house witch that she is, hosted a craft night for the Red Couch girls.  It's made with simple stuff we had around our home.  Did I tell you?  She is also a thrifty witch.  We put them on our Halloween tree -- Zoulah will show you that later.

These little plaques were for the spring and were discounted in the fall for twenty-nine cents each.

Zoulah's directions:

1.  Paint over the herb signs with black, or your choice of paint, paint.  Let dry.
2.  Find a decoration and modge podge it on.
3.  Apply another thin coat of Modge Podge.  Let dry.
4.  Tie on a piece of cute ribbon or tulle.
5.  If you want to use glitter.  When the Modge Podge is still wet, press on a coating of glitter.  Let dry and then put on your decoration and apply a thin layer to the plaque and let dry.

Talley (10 years) made the one with the spider.  Tati (15 years) made the one with the cat.  I (29 years :)made the one with the pumpkin.
