- So navigating expectations of a client, there's a great scenario. Basically we take on 12 guests, we have one chef. 12 guests can't have 12 different menus, we're not a restaurant. So when you send out a preference sheet, they write down what they like and prefer, each guest writes that down, and the chef determines what meals to cook based on dietary requirements. When that happens, the chef, when the charter client boards the chef has a talk with the client. They set menus. So everyday, the chef speaks to the client and he sets a menu. Sometimes if there's a beef or there is a vegetarian, the chef will make one meal for the vegetarian. When you have guests that constantly order food, constant, so you've just done a big dinner, and now they're ordering cheeseburgers and fries, or you put out the food, and they didn't like the food, but I want this, and it's not a short order galley.
