Mirrors don't give feedback, friends do. Encourage your RP partner to be as objective as possible when providing feedback, it might even be good practice for them to provide constructive feedback.

You can never be over-prepared. Practice. Make your practice questions as difficult as possible. If it is too simple, you are probably doing it wrong. There is no problem if it turns out your practice questions were more difficult than the interview question, there is no consequence for that. If it turns out that your preparations have been below par, the consequence is that you may have delivered a below-par performance in your interview.

What has been most effective in our interview training, is to teach the concepts of behavioral interviewing, doing 2-3 interviewing role-playing scenarios for actual jobs within the organization and giving the rest of the participants the assignment to take notes and provide feedback so everyone hears the feedback. This keeps the other participants engaged. For online sessions, I find at times, constructive feedback isn't provided by others in the class when people are in breakout rooms and everyone is assigned to do a role-play.
